Chicken Majestic - It is a famous hyderabadi starter. Boneless chicken pieces cut intro strips, fried and then stir fried in a spicy yogurt sauce. This is a very tasty appetizer which will be gone within minutes after serving. Have this as an appetizer or as a side with your meals. This is a excellent side dish for rice and any kuzhambu, rasam combo.

I came known about this recipe after I tried in bawarchi restaurant. It was very tasty and I liked it a lot. Then I searched for the recipe and it was pretty simple too. It can be a perfect appetizer. Many of the recipe says to add soya sauce but I am not using it here. If you want, you can add a little bit.

Use boneless chicken thigh pieces or chicken breast pieces. Before starting, marinate the chicken pieces in buttermilk for at least two hours. It helps the chicken to be more tender. If you want this chicken majestic a little bit saucy, add little more yogurt and stir fry without drying all the sauce. Once you made this, serve it hot. Let's go to the recipe now..

INGREDIENTS

To Fry Chicken
Chicken, boneless - 300 gms
Buttermilk - 1/2 cup
Egg - 1/2 of 1 medium egg
Ginger Garlic Paste - 1 1/2 teaspoon
Corn Flour - 2 tablespoon
Chilli Powder - 1/4 teaspoon
Oil - 1 teaspoon
Salt - as required
To Stir Fry:
Oil - 1 tablespoon
Garlic - 2 cloves, chopped
Green Chilli - 4, slitted
Curry Leaves - 1 sprig
Mint Leaves - 25 to 30 leaves, chopped
Curd/Yogurt - 1/4 cup
Turmeric Powder - 1/4 teaspoon
Chilli Powder - 1 1/2 teaspoon
Coriander Powder - 1 teaspoon
Cumin Powder - 1/4 teaspoon
Salt - to taste

1Take boneless chicken thigh pieces. Clean and wash the chicken first then cut into long strips. Take the buttermilk in a bowl and put the chicken strips in buttermilk and marinate it for atleast 2 hours. This process helps the chicken to be more tender. If you don't have enough time, skip this step and follow from the next steps.

2After 2 to 3 hours, drain the buttermilk. Gently squeeze the chicken pieces to remove excess buttermilk. Now, take the chicken in a bowl and add half of egg, corn flour, chilli powder, ginger garlic paste and enough salt. Mix it well.

3Mix till all chicken pieces are coated well. Now, heat oil in a pan. After it is heated, add the chicken pieces to it.

4Fry it less than a minute on one side and flip it over to the side. Then cook the other side also till it is done. Since it is a thin strip, it will cook faster. Just fry till it is cooked not to crispy. Fry it in batches without overcrowding the pan. Once fried, remove from the oil and keep it in a paper towel.

5Now, remove the pan and take just two tablespoon of oil(use the oil used for frying chicken). Heat over high flame. Add chopped garlic followed by green chilli, curry leaves, mint leaves. Give a quick stir.

6Then reduce the flame a little bit and add turmeric powder, chilli powder, coriander powder, cumin powder and enough salt. Give a quick stir. Don't keep it long otherwise the masalas will burn fast. Immediately add the curd.

7Mix it and let it cook for few seconds. At this stage the sauce starts to thick and you can see the oil floating on the top. Now add the fried chicken strips.

8Mix well till everything well combined. Do not keep it too long. Once everything mixed together, remove from the stove. Serve hot with lemon wedges.

NOTES

If you don't have buttermilk to marinate the chicken, take a little curd and mix it with little water. Add the chicken pieces to this diluted yogurt.

Do not fry the chicken too much. It take only 2 minutes to cook.

When you stir fry the spice powders in hot oil, give a quick mix to avoid burning the masala.

Mint leaves can be added more if desired.

After you added the chicken strips in the sauce, do not keep it long in the stove. Otherwise it will become dry.
