Creamy Tomato Soup - It is a perfect soup to drink at any time or any season. This soup is sour and sweet which will satisfy your taste palette. This soup takes only 30 minutes or less to prepare. Enjoy this soup with a slice of bread or with croutons!!

Tomato soup is one of the easiest and quickest soup to you can make with only few ingredients. Choose good juicy variety of tomatoes since the taste varies depends on the tomatoes. Here I mixed both the juicy variety and not so sour variety(roma tomatoes), since I like my soup not too sour. But If you like sour soups like the one you getting at the restaurant, you can go fully with sour variety.

To get the nice color and sweetness, I added little carrot too. Have this soup as an appetizer or at the evening time during winter months. Let's see how to make the tomato soup!!

INGREDIENTS

Tomatoes - 5 medium sized
Onion - 1/2 cup, chopped
Garlic - 3 Cloves, chopped
Carrot - 1/2 of 1 big carrot
Bay Leaf - 1
Fresh Cream/Heavy Cream - 2 tablespoon
Dried Oregano - 1/2 teaspoon (optional)
Pepper Powder - as required
Sugar - 1 tablespoon
Salt - to taste
Butter - 2 tablespoon

1Chop the onion, garlic and chop into small pieces. Wash and then hull(remove the core) the tomatoes. Just remove the center part with the help of a knife.

2Roughly chop the tomatoes and keep it aside. Now, heat a pan with butter and add in the bay leaf, chopped onion, garlic.

3Once the onion becomes soft, add in the chopped tomatoes and carrot. Add little salt to help the tomatoes cook faster. We can add the remaining salt later.

4After a minute or so, tomatoes will become slightly mushy. Then close the lid and cook over medium flame till it is fully cooked and mushy. This could take around 10 minutes.

5Switch off the stove after tomatoes and carrots are cooked very well. Remove the bay leaf from the cooked tomatoes. Let the cooked tomato cools down completely. After that, transfer the mixture to a blender

6Blend it into a smooth puree. Then strain this through a strainer to get a smooth soup.

7Transfer the soup to a pan and bring it back to stove and heat it. If the soup is too thick, add some water to thin it out and heat it. While it is heating add dried oregano, sugar, salt and pepper powder. Mix it well.

8Taste the soup to check seasoning. If it needs more salt and pepper, add. After the soup is super hot, add in the cream. Mix it well and then switch off the stove. Serve it hot.

NOTES

I have taken 3 tomatoes which are sour kind and another two roma tomatoes which are not that sour, since I don't like too sour soup. But If you like sour soup, take juicy and sour variety. Taste vary depends on the tomato quality and type.

Add half of the salt while cooking the tomato helps to cook the tomato faster. Then add the remaining salt later.

Adding dried oregano or parsely will enhance the flavor of the soup. But If you don't have that at home, just skip it.

Because I added carrot to the soup, I added a very little sugar. Also I thinned the soup with water to reduce the sourness. If you like sour and sweet soup, adjust the sugar quantity by tasting the soup.

Adding carrot will give nice color and sweetness to soup.
