Christmas Fruit Cake - Rich and delicious cake that has lots of dry fruits, nuts and a special spice powder. I can't describe the taste of this cake in words because this cake is that much delicious. Unlike the traditional recipe that soaks dry fruits in alcohol, I am using freshly squeezed orange juice here. Definitely orange juice brings out more flavor and taste. Alternatively you can use grape juice too.

I am crazily addicted to this Christmas plum cake. Last year when I first baked this cake, I felt very happy. I love baking and especially the aroma comes from the cake while it is baking in the oven. This cake is even more aromatic and flavorful mainly because of the spice powder and the orange flavor.

Lot of variations are there for this recipe. Here, I adapted little kerala style christmas cake recipe. My friend told me that the kerala christmas cake has little spice(only green cardamom) and they prepare caramel for the color. Since I love the spice flavor in this cake, I added lot of spices. But it won't be overpowering. Don't be afraid of it. Try it and you will also crazily fall in love with this cake.

Coming to the dry fruits, I added raisins, fig, dates, apricots, tutti frutti. You can also change the ratio of dry fruits. For example, if you want more apricots and less tutti frutti, adjust it. Here dry fruits ratio is almost double in quantity compared to flour. So that in each bite you can get at least 3 to 4 dry fruits:). That's my favorite part of this cake.

Here, I have used freshly squeezed orange juice. So I soak the dry fruits for only 3 to 4 days not more than that. If you don't have that much time, you can just soak it overnight. But I will recommend 3 days so that dry fruits gets more flavor and gives the rich taste. Now that we discussed everything in detail, let's move on to the recipe. Christmas Fruit Cake

INGREDIENTS
  PRINT RECIPE  
All Purpose Flour/Maida - 275 grams
Butter - 275 grams
Sugar - 275 grams
Eggs - 4
Vanilla Extract - 1 1/2 teaspoon
Baking Powder - 3/4 teaspoon
Cashews - 20 nos, chopped
Almonds - 15 nos, chopped
Dry Ginger Powder - 1/2 teaspoon
Orange Zest - From 1 big orange
Dry Fruit Soaking (Total Dry Fruits: 500 grams)
Black Raisin - 100 grams
Green Raisin - 100 grams
Tutti Frutti - 100 grams
Dates - 75 grams
Apricot - 50 grams
Fig - 50 grams
Tart Cherries - 25 grams
Orange Juice - 250 ml
Spice Powder:
Cinnamon - 1 inch piece
Cloves - 5 nos
Green Cardamom - 3
Nutmeg - 1 small piece, 1/4 teaspoon
Cumin Seeds - 1/4 teaspoon
Fennel Seeds - 1/4 teaspoon
INSTRUCTIONS

1Dry Fruits Soaking: Chop all the dry fruits into small pieces. Cut the raisin too if you can. Then add all these in a glass jar or glass container. Now, pour the freshly squeezed(or store bought) orange juice in the bottle.

2Close the lid and soak it for two to three days. In between just shake the jar twice a day to evenly distribute the juice. After three days dry fruits will absorb all the juices and becomes soft(Like in the pic)

3Now, for the spice powder, heat a pan and add cinnamon, cloves and green cardamom. Dry roast it for few seconds or till you can feel the spice aroma.

4Then add in the nutmeg, cumin seeds, fennel seeds. Stir it for few seconds(like 5 to 10 seconds). Remove it from the flame, let it cool down completely. Then grind it into a fine powder. If you couldn't grind into a fine powder, add little sugar along with spices while grinding. Then sieve it through the strainer. Keep this aside.

5To prepare the caramel, take 1/2 cup of sugar from the measured quantity. Add it to the pan with 2 tablespoon of water. Heat it over medium flame. Once the sugar melts, do not stir it. It will bubble first.

6Then the color starts to change slowly. Again do not stir it, you can swirl the pan if needed. Once the color reaches the brown color, remove from the stove. Then carefully add in 1/2 cup of water to that syrup. If it is more watery, heat it up till it reaches a syrup stage otherwise leave it and let it cools down.

7Meanwhile pre-heat the oven to 325° F. Grease the baking pans with butter and put parchment paper/baking paper in the pan and again grease the paper with butter. Keep it aside.

8Now, take the room temperature butter in a big bowl. Beat it with a hand whisk or with electric whisk. Beat well till the butter becomes light and pale.

9Add in the remaining sugar(remember we already used little for caramel). Continue whisking till everything mixed well and the almost sugar melts. Then add in one egg at a time and whisk. Once you whisked one egg and combined well then add in the second egg, repeat this for rest of the eggs.

10Now, add the spice powder along with dry ginger powder, orange zest, vanilla extract, cooled caramel syrup. Whisk everything till all combined. Sieve the flour and baking powder together to the wet mix.

11Gently fold the flour with the help of the spatula. It is time to add all the soaked dry fruits and chopped nuts.

12Again gently fold in the nuts and dry fruits using spatula. Scrape the sides and mix it thoroughly so that all the nuts and dry fruits will be evenly distributed.

13Now, fill the batter to the baking pan. Here, I used one loaf pan and one small round pan. Bake the cake till when the skewer is inserted at the center of the cake, it should come out clean. Since the round cake is small, it took almost 50 minutes to 60 minutes and the loaf pan took 1 hour 20 minutes. Once the cakes are done, take it out from the oven. Cool completely before you cut the cake. Once it cools down completely, cover the cake with parchment paper/cling wrap to avoid drying. Enjoy!!

NOTES

Here I have used freshly squeezed orange juice. If you are using store bought ones, use 100% orange juice.

If making caramel is very hard for you, just simply skip the step. Add all the sugar to butter and beat it. But that caramel gives the beautiful dark color to the cake.

Since the caramel will be high in temperature, handle carefully and you have to be more careful while you add water to it.

Check the cake after 50 minutes. The baking time differs according to the pan size and the oven. So check the cake and take out once its done.

It is important to let the cools down completely before you slicing it. After it completely cools down, wrap the cake with butter paper/cling wrap. This way the cake won't be dry and remain soft.

The cake taste best after the next day. It will be more flavorful after a day or two.

I am not sure how many days it will stay good as we usually share it with friends and finish is it in couple of days. But you can store this at room temperature for at least a week and a month in refrigerator.
