Omapodi/Plain Sev - is a simple snack and can prepared with the ingredients that are always available at home. You can store this snack and enjoy it for two weeks. This omapodi and cup of tea or coffee makes your evening fulfilling. You can prepare this for diwali too. Since it is a plain sev and don't have any chilli powder, this is a very kids friendly snack.

From my childhood to now, this is one of my favorite snack recipe. We buy this snack often from the shops. Now, I am in USA, lot of snacks are not available. So I started to make snacks at home. This is very easy to make too. The omapodi we get at shops is super fine but I am using the idiayappam press at home. I don't have that super fine nozzle piece with me at home and moreover this is easy to press also..

Apart from eating this omapodi as a snack, you can use this in many ways. This is one of the main part in south indian mixture, I will share the mixture recipe soon. This plain sev can be used in lot of chat items too. Make this tasty omapodi and enjoy!! Hearty deepavali wishes to you all!!!

INGREDIENTS

Kadalai Maavu/Besan Flour - 1 cup
Rice Flour - 1/4 cup
Butter - 1 tablespoon, at room temperature
Omam/Ajwain - 1 teaspoon
Turmeric Powder - 1/8 teaspoon
Oil - to fry
Water - as required

1Heat a pan and dry roast the omam. Grind the omam in a blender or mortor and peslte. Coarse powder is okay.

2Then soak this in 1/4 cup of warm water for 10 minutes. Now, heat oil in a pan enough to deep fry the omapodi. Meanwhile in another bowl sieve the besan flour and rice flour together. Add the room temperature butter, turmeric powder and enough salt to flour mix.

3Mix it all well with your hands till everything combines together. Now, strain the omam water and add the water to the flour bowl.

4Make a sticky dough by adding water little by little. Take the small nozzle for omapodi. Here, I do not have samller than this one. So I chose for idiyappam nozzle piece.

5Slightly grease the mould with oil and fill it with the dough. Check the temperature of oil before you fry by taking a little piece of dough and add it to the oil. If it raises at the top, oil should be ready. Now, press the idiayappam mould in the circular motion in oil.

6After one side is cooked, flip it and cook it on the other side too. Once it is cooked, the oil sound will stop and it will settle. Remove it from the pan. Fry the remaining dough also. Once all done, let it cool down. Then crush it and store it in an airtight container.

NOTES

Turmeric powder gives the omapodi the dark yellow color. But it is totally optional.

Add water little by little to the flour and knead.

If you have nozzle with finer holes than mine, you can use that too. It will be same like what we get in the shops. But it will be difficult to press through fine holes.

You can store this omapodi in an airtight container for two weeks.

Always cover the remaining dough while you fry the omapodi. Otherwise dough will become dry.

If the dough is tight and you couldn't press through the mould, then add very little water and knead.
