Coconut Rice is a flavorful and everyday rice variety from south Indian cuisine. Freshly grated coconut gives a wonderful flavor and aroma to this dish. This can be made within 20 minutes and it will go well with any veg curries, kurumas or non-veg curries.

I like coconut milk rice more than this coconut rice. I have shared the recipe for coconut milk rice already. My hubby likes this one better. So I make this also once in a while. Freshly grated coconut suits best for this recipe instead of frozen coconut. Because that adds more flavor and elevate this dish. So I strongly recommend freshly grated coconut for this recipe. Coconut rice tastes best when it is hot. Otherwise the fat from the coconut may solidify. So If you are eating later, just warm the rice little bit.

INGREDIENTS

Raw Rice - 1 cup
Grated Coconut - 1 1/2 cup
Oil - 1 tablespoon
Ghee - 1 tablespoon
Mustard Seeds - 1/2 teaspoon
Urad Dal - 1 teaspoon
Channa Dal - 1 tablespoon
Curry Leaves - 1 sprig
Green Chilli - 3, slitted
Red Chilli - 2
Cashews - 10 to 15
Asafoetida/Hing - a generous pinch
Ginger - 1 teaspoon, finely chopped
INSTRUCTIONS

1Wash the rice 2-3 times then add it in the pressure cooker with 2 cups water and enough salt. Pressure cook the rice for two whistles. Let it cool down a little and then spread it in a plate to completely cool down. To avoid the rice sticking each other, you can add a teaspoon of oil to the rice and mix it. Keep it aside.

2Then heat a pan and add both oil and ghee. Once it becomes hot, add mustard seeds, urad dal and channa dal. After few seconds, add the cashews, green chillies, red chillies(break the chilli into two), chopped ginger and hing. Stir everything till all the dals and cashews becomes golden brown.

3Now, add the grated coconut and give a quick stir. You don't need to saute this for long time.

4Finally, add the cooled rice and enough salt. Remember we already added salt for rice while cooking. Taste and add salt if needed. Mix everything well and serve. Have this rice hot with your favorite curries!!

NOTES

Cooking the rice fluffy and without mashing is important. If you add correct amount of water to the rice, you will get perfectly cooked rice.

Here, I have added 2 cups of water for 1 cup of rice. But some rice needs only 1 3/4 cups of water. So adjust the water quantity depends what rice you are using. Instead of raw rice, you can also use basmati rice.

Fresh grated coconut gives wonderful aroma and taste to this rice. You can use frozen coconut if you don't have fresh coconut.
