Sabudana Kheer/Javvarisi Payasam - is a very quick and easy dessert made with tapioca pearls, milk, sugar and cardamom powder. It can be done within 30 minutes if sabudana is soaked already. You can make this on festival days like Navaratri. It is very popular during navaratri days in India.

Here, I have added half quantity milk and half quantity water. But you can cook the sabudana fully in the milk. Just skip the water and add milk instead. Do remember that this kheer will thicken once it is cooling down because of the starch in the sabudana. You can add saffron and chopped nuts to make this kheer even more rich and delicious. Now, let's see how to make this javvarisi payasam!!

INGREDIENTS

Tapioca Pearls/Sabudana/Javvarisi - 1/2 cup
Water - 2 cup
Milk - 2 cups
Sugar - 1/2 cup + 2 tablespoon
Cardamom Powder - 1/4 teaspoon
Ghee - 1 tablespoon
Cashews - 10 nos
Raisins - 10 nos
INSTRUCTIONS

1Wash tapioca pearls one to two times and drain water. Now, soak it in water. Pour water just enough to immerse the tapioca pearls. Let it soak for 2 hours.

2After 2 hours, it will puff up a little bit. Keep this aside. Now, heat a pan with 2 cups of water and 2 cups of milk.

3Bring this to a boil. Once it starts boiling, add the soaked tapioca pearls with the water to the milk.

4Simmer the milk over medium flame and allow the tapioca pearls to cook. The tapioca pearls will start to float on the top while it is cooking. Check if it is cooked by pressing it. If it is soft and looking translucent, then it is done.

5Now, add the sugar. Stir and let the sugar dissolve. At this stage, you can add the cardamom powder too.

6Continue simmering the milk over low to medium flame for another 10 minutes. It will start to thicken up a bit. Beacuse if the starch content in sabudana , it will thicken more even after you remove it from the stove. So don't boil the milk till you get the thick consistency otherwise it will become too thick. Once the kheer reaches the desired consistency, remove it from the stove.

7Heat a pan with ghee and roast cashews, raisins. Add this to the kheer and mix it. Yummy sabudana kheer is now ready!! Serve it hot or cold.

NOTES

Soaking sabudana helps to make the cooking process faster.

If you want more sugar, you can add an extra tablespoon or two.

You can also add saffron to the kheer to get the nice color and flavor.
