Chicken Egg Drop Soup - This soup is warm, comforting and it is perfect for any season. It is kind of Indo-Chinese type. I made this soup in a south Indian style and finished it with egg and spring onion like a chinese style soup. It is so delicious and I am sure you will make this soup quite often. You can have this as a first course of your meal or as an evening time soup with or without bread.
Initially, I don't like egg drop soup. More like I was scared of the thought that the eggs were not fully cooked (like an half boil) on the top of the soup. So I didn't even try it before. Then one fine day my friend told me that "No, it is not like that, the egg will be fully cooked, try and you will like it". Then I tried at home with my style of chicken soup and it was awesome. After that I am not missing to make chicken soup with egg.

Here, I have added chicken leg/thigh with bone since it will be more tender. Try to add chicken with bone rather than boneless chicken pieces because the soup will get more flavor from the bones. But If you don't like to handle the bone while drinking the soup, you can totally replace it with boneless chicken pieces. Try this soup, stay warm and cozy!!!

INGREDIENTS

Chicken - 1 thigh with bones, about 300 Grams
Egg - 1
Onion - 1 med size (1 cup sliced)
Tomato - 1/2 of 1 medium size tomato (1/4 cup chopped)
Ginger Garlic Paste - 2 teaspoon
Chilli Powder - 1/4 teaspoon
Coriander Powder - 1 teaspoon
Cumin Powder - 1/2 teaspoon
Turmeric Powder - Just a pinch
Pepper Powder - 1 teaspoon
Spring Onion - 1/4 cup, chopped
Salt - As Required
Water - about 3 cups
Sesame Oil - 1 1/2 tablespoon
INSTRUCTIONS

1Wash and clean the chicken. Keep it aside. Now, heat the pressure cooker with oil. Once it is heated, add sliced onion. Saute it till it becomes light golden in color. Then goes in the ginger garlic paste. Cook it till the raw smell goes off.

2Now, add in the chopped tomatoes. Saute it till the tomatoes becomes soft. Then add chilli powder, coriander powder, cumin powder, turmeric powder.

3Give a quick stir then add the chicken pieces. Saute the chicken pieces for a minute then add enough water.

4Add in required salt, give it a mix and pressure cook for two whistles. Now, let all the pressure from cooker releases itself.

5Take one egg and whisk it well. Now, reheat the soup and add the pepper powder. Let it allow to boil.

6Now, simmer the soup and gently swirl the soup with the laddle. Now pour in the whisked egg gently and at the same time gently swirl the laddle also.

7The egg will form into threads and it will cook instantly with the heat of the pan. Finally garnish the soup with chopped spring onions. Serve the soup hot!!

NOTES
Adjust pepper powder to the desired level.
I have added chicken with bone since it gives more flavor to the soup but you can also use boneless chicken pieces.
Here, I used chicken leg/thigh pieces because it will be tender.
When you add the egg, you have to simmer the stove. The soup shouldn't be boiling at this stage.
Do not cook for a longer time after you add the egg. The egg will cook instantly in the heat of the soup.
