Curd rice/Thayir Sadham is a classic and delicious lunch menu which prepared mostly by south indians. It is made with cooked rice, yogurt as main ingredients and then tempered with mustard, green chilli, grated ginger, asafoetida and curry leaves. It is one of the best summer food but I would eat this at anytime on any season. :)

Curd rice with potato fry and pickle is one of my all time favorite menu. For me, cooked rice mixed with some curd is enough. No need to tempering at all. But sometimes to make the curd rice even more delicious, I make the curd rice using the following method.

Here I have added butter to the curd rice. The curd rice will be more creamier and rich with butter. Also, water and milk quantity is very important for this recipe. Adjust the water quantity for the curd rice. If you are going to serve within an hour, you can add 1/2 cup or more yogurt. If you are going to serve after 4 hours or more, add less yogurt.

INGREDIENTS

Raw Rice - 1/2 cup
Water - 1 1/2 cup
Milk + Water - 3/4 cup + 1/2 cup
Curd/Yogurt - 1/2 cup
Butter - 2 teaspoon
Salt - to taste
Green Grapes - 1/2 cup, halved, optional
To Temper:
Oil - 2 teaspoon
Mustard Seeds - 1/2 teaspoon
Curry Leaves - 1 sprig
Asafoetida/Hing - a generous pinch
Ginger - 1 teaspoon, grated
Green Chilli - 2, chopped
Coriander Leaves - 1 tablespoon, chopped
INSTRUCTIONS

1Wash the rice 2-3 times and add it to the pressure cooker with 1 1/2 of cup water and enough salt. Pressure cook the rice for 3 to 4 whistles over medium flame.

2While the rice is hot, mash the rice well with back of a spoon. Now, heat the milk and water(3/4 of cup milk + 1/2 of cup water) together in a pan till it comes to boil. Then remove from the stove and add it to the rice, mix well.

3Mash the rice while you mix the milk to the rice. If you need more water, just add hot water. Now, add the butter and Mix it well. It will melt and combine together with the rice. Let the rice cool down.

4Once the rice cools down, add the curd. Give it a quick mix and keep this aside.

5Now for the tempering, heat a pan with 2 teaspoon of oil. Once it becomes hot, add mustard seeds. Once it starts to splutter, add curry leaves, asafoetida, green chilli followed by grated ginger. Stir it for few seconds. Then add this tempering to the curd rice. Also, add chopped coriander leaves. Mix it well and it is ready to serve.

6To make this curd rice even more delicious, add halved grapes to the curd rice. Add the grapes just before half an hour or just before you serve. You can add pomegranate too.

NOTES

Check the salt after you add the hot milk and water. If it needs more, add it.

Adjust the water quantity for the rice. If you need more, add hot water when you add milk to the cooked rice.

Here, I added grapes for extra taste. You can add pomegranate too. Since it can stain the curd rice, add pomegranate just about to serve. You can also add grated coconut and chopped cucumber too.

Adding butter gives the nice creamy structure like the restaurant curd rice.

Just rest the curd rice at least an hour. So that it will be more flavorful.

If you are making this curd rice in the morning and to server in the afternoon, add less yogurt. If you live in a hotter place, add less yogurt. Otherwise, it will get very sour within 4 hours.
