Sweet pidi kozhukattai - Steam cooked sweet kozhukattai made with rice flour, jaggery and cardamom as main ingredients. It is simple to make and quite healthy too. It can be made as a evening snack and also it is one of the dish (prasatham) we make for vinayagar chaturthi.

For this sweet kozhukattai, I used store bought idiyappam flour. Kozhukattai made with idiyappam flour will be very soft. You can use homemade or store bought rice flour too. Since it is readily available at the store, I chose to make this with store bought flour today.

We always make these kozhukattai for vinayagar chaturthi. In addition to this, I make poorana kozhukkatai, mani kozhukattai and kondaikadalai sundal or kadalai paruppu sundal . If you don't have enough time to make poorana kozhukattai or if you want to keep things simpler, go with this sweet pidi kozhukattai. You can make this very quick and it will be tasty. INGREDIENTS

Idiyappam Flour/Rice Flour - 1/2 cup
Jaggery - 1/2 cup, powdered
Water - 1 cup
Coconut - 1/4 cup, grated
Cardamom - 2, powdered
Ghee - 1 teaspoon
Salt - a pinch
INSTRUCTIONS

1Take powdered/grated jaggery and 1 cup of water in a pan. Heat it over medium flame. Let all the jaggery dissolve and after that remove from the stove.

2Strain the jaggery water to remove any dust and impurities. After that, rinse the pan and transfer the jaggery water back to the same pan.

3Now, add in grated coconut, ghee and cardamom powder to jaggery water and boil it over medium flame. Once it started boiling, simmer the stove.

4Add in the rice flour slowly and mix well with a spatula or a spoon. Do this method quickly because it will thicken very quickly.

5Once the flour dough comes together as shown in pic below, switch off the stove. Remove it from the stove and cover it. Let it rest till it becomes warm enough to handle.

6After dough becomes warm, grease your hand with oil or little ghee and knead this into a smooth dough. Now, take a small portion(small ball size), roughly make oval shape. Then press it with your finger like in the below pic. Do the same with the remaining dough.

7Place all the shaped kozhukattai in a steamer or idli plate. Cover and steam cook it for 10 minutes. It will be shiny once it is cooked. Hot delicious kozhukattai is now ready!!

NOTES

Here, I used store bought idiyappam flour. You can use homemade or store bought rice flour too. If you are using store bought rice flour, just roast them a little bit before you use.

You do not need to boil the jaggery water till syrup stage. Just heat it till jaggery dissolves.

Grease your hand with oil or ghee before you shape the kozhukatai. It helps to make a smooth shape and prevent from sticking.

Adjust jaggery according to your taste. If you want a sweeter kozhukattai, add a little more jaggery.

For 1 cup flour and 2 cups of water gives a softer pidi kozhukatai.

Do not let the dough comes to a room temperature. Knead and shape the kozhukattai while it is still warm to handle.

If you are making a large batch, keep the dough and the shaped kozhukattai covered till you place them in the steamer. Otherwise it will become dry.

Instead of grated coconut you can also use chopped coconut pieces. It will give a nice crunchy texture.
