Pepper Chicken Fry - is one of the common recipe that most south Indians love to have. It is a dry roast and the heat for this dish comes only from the freshly crushed pepper and the curry leaves gives a wonderful flavor and taste to this dish. No chilli powder is used in this recipe. It is a simple but flavorful recipe.

This pepper chicken is the favorite dish of most people in Tamil Nadu. We too love this dish. You can make this real quick and it doesn't require bunch of ingredients. Just rasam with this pepper chicken as a side dish will be heaven. This pepper chicken goes well with hot rice and sambar, rasam or with chicken curry and mutton curry. Since it is a dry dish, we choose to have this with hot rice but not with chappathi. Adjust the pepper powder according to your spice level. Since pepper is good for cough and cold, you can eat this dish when you have cold too. Make this pepper chicken fry and let me know how you like it.

INGREDIENTS

Chicken - 350 grams
Onion - 1/2 cup, sliced
Ginger Garlic Paste - 1 1/2 teaspoon
Garam Masala Powder - 1/2 teaspoon
Turmeric Powder - 1/4 teaspoon
Curry Leaves - 1 sprig
Dry Red Chilli - 2
Salt - to taste
Oil - 1 1/2 tablespoon
To Grind:
Peppercorn - 1 1/2 tablespoon
Cumin Seeds - 1 teaspoon
Fennel Seeds - 1/2 teaspoon
INSTRUCTIONS

1Take the ingredients under to grind in a mortar and pestle or in a mixer jar. Grind this into a smooth powder and keep it aside.

2Now, clean the chicken and cut into medium size pieces. Heat a pan with oil over medium flame, add sliced onions. Break the red chilli into two and add it to the pan.

3Fry till onion becomes soft. After that, add ginger garlic paste. Saute well till its raw smell goes off. Now, add the washed chicken pieces and turmeric powder.

4Stir and cook the chicken till it becomes white in color. Add enough salt and allow the chicken to cook. Once it starts to cook, water will ooze out form the chicken itself. So you don't need to add water. If needed, just sprinkle the water in between cooking.

5After 5 minutes, chicken will be half cooked. Now, it is the time to add the ground masala. Add the ground powder and garam masala powder and mix it. Saute it for a minute. Cover the pan and continue cooking the chicken over low flame till it is completely cooked. This will take approx 10 minutes.

6Once the water is all dried out, add the curry leaves and saute it for a minute. Pepper chicken is now ready!!

NOTES
If the pepper mentioned above is spicy for you, reduce the pepper to 1 tablespoon.
Add curry leaves generously to this recipe. Curry leaves plays an important role in pepper chicken and it adds taste and flavor to this dish.
Do not add water as it is a little dry dish. Water will ooze out from the chicken itself when it starts to cook. If needed, add very little water.
