This is one of the simplest and must to have recipe for me during mango season. I love to have this with fish tacos. But as I said earlier you can have this as it is or with any chips. Choose medium to well ripened mangoes which works well for this recipe. If your mango is too sweet, add little more jalapeno to balance the sweetness. INGREDIENTS

Mango - 1 Big
Capsicum - 1/2 cup, chopped
Onion - 1/4 cup, chopped
Lime - 1
Jalapeno - 1
Coriander Leaves - 1/4 cup
Salt - to taste

1Wash capsicum and jalapeno. Finely chop the red capsicum, remove the seeds from jalapeno and chop it very fine. Transfer it to a bowl.

2Next, finely chop the onion and wash them well to remove the strong flavor of raw onion. Strain the excess water and add them to the bowl. And also add finely chopped coriander leaves to the bowl. Next, take the mango and wash well.

3Chop them into small pieces and add them to the bowl. Now the chopping part is done.

4To this add lime juice from 1 lime and enough salt.

NOTES
Do not use overly ripened mangoes to this salsa. Medium to well ripened is good for this recipe.
You can make this ahead of 6 to 7 hours before serving. Just keep refrigertated till you serve.
I am adding red capsicum to give a nice red color. But you can use green capsicum too.
Wash the onion before you add. You can even soak the chopped onion for 5 minutes. It helps to remove the strong smell of raw onion.
