Kashmiri Dum Aloo - An yogurt based potato gravy and it goes well with plain rice, jeera rice or chappathi. Baby potaoes are boiled, deep fried and dum cooked. This recipe is part of a kashmiri cuisine.

I am making this dum aloo in recent times only. Usually, I make dahi aloo which is very simple and quick to make. On the other hand kashmiri dum aloo takes time but it is very delicious and aromatic. Dum aloo was introduced by my friend Anu. She shares lot of amazing food with me often. This is one of her recipe I liked most. She also shared the recipe too. I tried and it came out well. This recipe is based purely on yogurt/curd but there is another version which is onion, tomato based gravy. Here, we are not going to add any onion, tomatoes. To get a rich red color, use kashmiri chilli powder instead of regular chilli powder. That will give you a rich red color with less spiciness. Here, I mixed and added both regular and kashmiri chilli powder. Make and enjoy this delicious and rich kashmiri dum aloo!!

INGREDIENTS
  PRINT RECIPE  
Baby Potatoes - 10 to 12
Yogurt/curd - 3/4 cup
Water - 3/4 cup, adjust
Chilli Powder - 1 1/2 teaspoon
Kashmiri Chilli powder - 1 teaspoon
Ginger Powder - 1 teaspoon
Turmeric Powder - 1/4 teaspoon
Asafoetida - 1/8 teaspoon
Salt - to taste
Oil - 3 tablespoon
To Roast and Grind:
Coriander Seeds - 1 teaspoon
Fennel Seeds - 2 teaspoon
Cloves - 3
Cardamom - 2
Black Pepper - 3 to 5
Cinnamon - 1/2 inch piece
INSTRUCTIONS

1Take the baby potatoes and wash well. Then put these in a pressure cooker and add water just enough to cover the potatoes. Now, pressure cook it for just one whistle. After that remove from the stove and let it cool down.

2Meanwhile, heat a pan and add all the ingredients mentioned under "to roast and grind". Dry roast these ingredients for 3 to 5 minutes over medium flame. Once it is roasted well, add it in the mixer or in the mortor and pestle.

3Grind into a smooth powder and keep aside. In a bowl, take yogurt and whisk till it becomes smooth. Keep this aside also.

4Now, back to potaotes. Open the pressure cooker and drain the water. Let the boiled potaoes cool down enough to handle. Now, peel the skin of potatoes.

5With the help of the fork or toothpick, poke holes all over the potato as shown in the below pic. Repeat this step on all potatoes. Heat enough oil to deep fry the potatoes. Once it gets hot enough, add the potatoes one by one carefully into the oil.

6Deep fry the potatoes for 8 to 10 minutes or until the outer layer shrinks and becomes golden in color. After that, remove the fried potatoes and keep it in the paper towel to remove excess oil.

7Now, it is time to prepare the gravy. Heat a pan and add oil. Once it becomes hot, add in asafoetida and turmeric powder. After that add chilli powder and mix it quickly. Do not let it burn the masala.

8Now, reduce the flame and add the whisked yogurt. It is important that you have to add the yogurt over low temperature otherwise yogurt may curdle. Now, let this mixture boil over low flame.

9To this add 3/4 cup of water, dry ginger powder followed by the ground masala that we prepared in step 3. Also add in enough salt and mix well.

10Cover it and let it cook in low flame for 10 minutes. Then add the fried potaoes to this gravy.

11Cover and let it cook in low flame for another 10 to 15 minutes. The gravy will start to thicken a little bit. If you want it thick, cook it little more time. You can see the oil we added floating on the top. Now, dum aloo is ready to serve.

NOTES

It is imprtant to add the yogurt over low temperature otherwise it may curdle. You can also add little besan flour to the yogurt and whisk well. Besan flour helps to prevent the yogurt.

Don't pressure cook the potatoes too soft. The potatoes has to cook in the yogurt gravy.

Instead of freshly roasted and ground powder you can also add already prepared coriander powder, fennel powder and the whole spices.

I made this dum aloo little thick in consistency. If you want thin gravy, add little more water. Add an extra 1/4 cup to 1/2 cup of water.
