Ragi Malt - is a healthy and nutritious drink which has finger millet flour, almonds, cashews, pista, cardamom and saffron. You can make this mix at home and make a drink whenever you want. You can also have this as a breakfast if you want a helahty as well as a very quick breakfast.

I make this ragi malt mix often and store this in an airtight container. I make the drink as breakfast or as evening drink. It is a healhty alternative to coffee and tea. If you are having this drink as a meal, add more mix and make it thick. So that it fulfils your appetite. Since I am adding alonds, cashews and pista, this drink will be more delicious. Kids will drink this without hesitation. If you don't want cashews and pistas, skip that and add only almonds . Make this mix at home and have this healthy ragi malt often!!

INGREDIENTS

Finger Millet Flour/Ragi Flour - 1 cup
Sugar - 3/4 cup
Almonds - 15 nos
Cashews, Pista - 5 each
Cardamom - 5 to 7 nos
Saffron - few strands
To Make Ragi Malt:
Milk - 1 cup
Water - 1/2 cup
Ragi Malt Powder - 1 1/2 tablespoon

1First, take almonds, cashews, pista and cardamom in a pan and dry roast them. Roast the nuts till it gets heated. So that you can powder it easily. Do not roast for longer time. Transfer the nuts to a bowl after they are roasted.

2In the same pan, add the finger millet flour and dry roast it. Mix it often and roast well over medium flame for 2 to 3 minutes. Once it is roasted well, remove from the heat and transfer them to a plate and let it cool down.

3Once the flour and nuts cools down, add this to the mixer along with sugar and saffron strands. Grind it to a smooth powder.

4Transfer this ragi malt powder to a glass jar/airtight container to retain its freshness. Use it whenever you need. Now, to make the ragi malt, take a pan and add 1/2 cup of water and 1 1/2 tablespoon of ragi malt powder. Mix well without any lumps. Now, heat this over medium heat. Let it boil for a minute.

5After that add 1 cup of milk and let it boil for two minutes. At this stage, the raw smell of flour will go off and the milk is also starts to thicken a little bit. Here I am making this ragi malt a little thin. If you want a thick raagi malt like porridge, boil for some more time.

6Taste, add sugar if needed. Strain it before you drink. Healthy ragi malt is now ready!!

NOTES

Instead of adding sugar while grinding, you can add sugar when you make the drink.

I added cashews and pista to make this drink more tasty and rich. You can skip it if you want but almonds.

Replace jaggery with sugar if you like. But do not add the jaggery while grind the powder. Add it when you make the drink.
