Coleslaw - Coleslaw is nothing but the simple cabbage salad with mayo, lemon juice and with few other ingredients and it can be eaten as a side dish. If you have mayo, then it is easy to make this recipe within minutes. The creamy, tangy and sweet taste of this makes you eat this more. If you want to make mayonnaise at home, here is the Homemade Mayo Recipe. It is very easy to make with very few ingredients.

Coleslaw is one of the popular dish here in USA. I once bought a fish taco in a restaurant and they had the coleslaw added in the taco. Sometime it is also served as a side dish with burgers, sandwiches and fried chicken. You can also add coleslaw as one of the element between the buns in burger. I will share fish taco and burger recipes soon.

Here, I have added purple cabbage for giving a vibrant color. But If you don't have purple cabbage, just skip and add green cabbage. And for the mustard paste, just take mustard seeds and add it to the mortar and pestle. Grind it smooth by adding very little water. If you have any store bought dijon mustard with you, you can add that instead of homemade mustard paste. Now, let's see how to make coleslaw!!

INGREDIENTS

Green Cabbage - 2 cups, shredded
Purple Cabbage - 1 cup, shredded
Carrot - 1/2 cup, julienned
Onion - 1/4 cup, thinly sliced
For the Dressing:
Mayonnaise - 1/4 cup
Mustard Paste - 1/2 tablespoon
Lemon Juice - 1 tablespoon
Sugar - 1 teaspoon (optional)
Salt - to taste
Black Pepper Powder - 1/2 teaspoon, adjust per taste

1Take a cabbage and remove the exterior layer. Wash it and chop the cabbage into quarters, remove the hard center part of the cabbage. With the knife, chop the cabbage into very thin strips or shred them with a grater. Now, repeat the same with the purple cabbage. Also, julienne(thin sticks) the carrots. Now, transfer all of them in to a big bowl and mix well. Keep it aside.

2Now, chop the onion into thin slices. Wash the onion slices and soak it just for a minute. Soaking is optional. This step helps to reduce the strong smell of onion. Now, drain the water and add the onion slices to the cabbage bowl.

3Let's prepare the dressing: In a bowl, take mayonnaise and mustard paste. Give it a mix then add lemon juice, sugar, enough salt and pepper powder.

4Mix it till everything is combined well. Now, pour half of it on cabbage.

5Mix it well then add the remaining dressing and mix it well till all the vegetables coated well with the dressing. Coleslaw is now ready to serve!!

NOTES

Adding sugar is totally optional. If you don't want, just skip it.

Add dressing little by little at a time and mix it. This helps to mix the dressing easily with the vegetables.

Slice the cabbage into very thin strips for this coleslaw recipe. If you are not comfortable with cutting the cabbage with the knife, simply grate them in the vegetable slicer.

You can also prepare this coleslaw before 4 to 5 hours. Then refrigerate it till serving.
