Ridge gourd kootu/Peerkangai Kootu - It is one of the everyday recipe from Tamil Nadu cuisine. This kootu with rice and appalam or any side dish or pickle will be a delicious lunch. We can also make peerkangai poriyal, chutney, curry and thogaiyal from peerkangai skin. I will share these recipes by later.

Peerkangai kootu is one of the dish I like very much. Whenever my mom buys ridge gourd, she makes this dish. She will also make some ridge gourd curry. My mom always says whenever you are going to cook ridge gourd, just taste a small of piece it and do not use if it is bitter. Just peel the skin and cut a small piece then eat it for testing. I always follow this before cooking. We can also follow this recipe for snake gourd (pudalangai) kootu, just replace ridge gourd with snake gourd.

Cooking kadalai paruppu to the correct consistency is very important. It has to be cooked well and it has to hold its shape instead of mushy. This way it gives a good texture to the kootu. Also ridge gourd will cook faster so you do not need to cook longer. Now, let's see how to make this kootu

INGREDIENTS

Ridge Gourd/Peerkangai - 1, approx 250 grams
Split Bengal Gram/Kadalai Paruppu - 1/2 cup
Ground Coconut - 1 tablespoon
Onion - 1, chopped
Tomato - 1, chopped
Green Chilli - 1, slitted
Garlic - 2 cloves
Turmeric Powder - 1/4 teaspoon
Sambar Powder - 2 teaspoon
Asafoetida - 1/4 teaspoon
Coriander Leaves - 1 to 2 tablespoon
Oil - 1 tablespoon
Mustard Seeds - 1/2 teaspoon
Ulundhu/Urad Dal - 1/4 teaspoon
Salt - to taste
INSTRUCTIONS

1Take a pressure cooker with channa dal , wash it well for two times. Then add 1 1/2 cups of water, 1/4 teaspoon turmeric powder. Close the lid, put the whistle on. Pressure cook it for 3 to 4 whistles. After that switch off the stove. It has to be well cooked but not mushy.

2After that peel the skin of the ridge gourd and chop them into medium pieces. If it has seeds in the center, remove those and then chop it.

3Now, heat a pan with oil. Once it becomes hot, add mustard seeds. Allow it to splutter. Then add curry leaves carefully and a slitted green chilli. Stir it for a second, then add chopped onion. Saute it till it becomes soft. Now, add the chopped tomato. Let it fry till tomato becomes soft. Then goes in the chopped ridge gourd.

4Stir it for a minute and then add sambar powder, enough water and little salt for the vegetables to cook. Cover the pan and allow it to boil over medium flame till the ridge gourd gets cooked. It may take 5-7 minutes to cook.

5Then add the cooked kadalai paruppu and required salt. Continue cooking for 5 more minutes.

6Now it is time to add the ground coconut paste. Add and cook it less than a minute. Do not cook for longer after you add the ground coconut. Finally, garnish the kootu with chopped coriander leaves. Peerkangai kootu is ready to eat!

NOTES

Do not cook the kadalai paruppu/channa dal too much. It has to hold the shape and well cooked.

Here I added ground coconut paste. But you can also make this kootu without coconut. It will also taste delicious.

Always taste the ridge gourd before you cook. Just take a small piece(raw) and taste it. If it tastes bitter, do not use that.
