Mayonnaise/Mayo is one of the basic sauces or dips and there are endless usage of mayonnaise. In this post, I am going share how to make mayonnaise at home. It is easy to make with simple ingredients. It can be prepared with in 5 minutes and it doesn't require any hard work. Since it is homemade and we are not adding any bunch of unwanted ingredients and preservatives, this mayonnaise stays good in the refrigerator for 3 to 4 days.

Mayonnaise can be used as a dip for pretty much any fried items like chicken nuggets, fish fry, potato croquette, fish fingers etc. Also, mayonnaise can be added in coleslaw, potato salad, sandwiches, burgers etc, etc... Many adds only egg yolk for mayonnaise but in this recipe I am adding the whole egg. So we don't have to think about what to do with the egg white. Talking about the oil added here, use any light flavorless oil for this recipe otherwise it will overpower the mayo.

To make mayonnaise, you can use Indian mixer(small jar), hand electric mixer, food chopper or stick blender. Any one of these do the job perfectly. It can even be made with a hand whisk without any electrical instrument but it takes time to make the mayo with the hand whisk. Make this at home and tell me how it comes out. INGREDIENTS

Egg - 1, medium size
Oil - 150 ml
Mustard Paste - 1/2 teaspoon
Lemon Juice - 2 teaspoon
Salt - as required
Pepper - generous pinch

1First, take the mustard seeds in a motor and pestle. Grind it into a smooth paste with very little water.

2Next, in a food chopper or mixer, add one whole egg, mustard paste and about one/fourth of the oil.

3Now, close the lid and blend for 30 seconds till everything is combined. It will become white and a little thick at this stage.

4Now, add in the lemon juice and again one-fourth of the oil. Blend it for few seconds. Check the mayo to see if it's coming together. Once it is well combined, again add one-fourth of the oil and continue blending it for few more seconds. Now, add remaining one-fourth of the oil and blend it till it becomes thick.

5Check the mayo if it becomes thick as shown in the picture below. Now it is time to season the mayo. Add enough salt and little pepper powder.

6Blend it for few seconds (15 to 30seconds) just to incorporate the salt and pepper. Now the mayonnaise is in perfect consistency. It is thick and creamy. Store it in the jar and keep it in the refrigerator.

NOTES

Important thing in making mayonnaise is to add oil little by little. Add oil little and blend it for few seconds, repeat this step for few more times. Do not add all the oil at once, it won't come together.

Dijon mustard is being added in the classic mayonnaise recipe. As a south indian, I use mustard seeds in my every day cooking. So I made a mustard paste and used it in this recipe. If you have dijon mustard, use that.

If you want little a sweetness, you can add 1/8 teaspoon of sugar.

Use oil that are not over powering. Use light and flavorless oils like canola, sunflower oil or light olive oil.

Vinegar also used instead of lemon juice.

Here, I used a food chopper. You can also use any Indian mixer or stick blender or hand electric mixer to make mayo.

Homemade mayonnaise should be refrigerated and it will stay good for 3 to 4 days.
