Coffee popsicle is one of the easiest popscile you can make at home and it's quite delicious. If you are a coffee lover like me, then you definitely gotta try this. Since I am adding cream in the recipe, it will be so creamy and it is simply the coffee ice cream poured in popsicle molds. It is nice to have coffee popsicle instead of having coffee in this hot weather.

Coming to the recipe, I added narasu's instant coffee powder without chicory. But you can add any instant coffee powder, just adjust the quantity depends on how much strong your coffee powder is. If you have leftover coffee decoction from your filter coffee, you can also use that instead of instant coffee powder. Also, I am adding the chocolate syrup in this recipe to take it to the next level. Chocolate syrup gives a nice brown color and taste. Though it is optional, I would recommend to add chocolate syrup. Soon, I will post how to make chocolate syrup at home. Now, make this creamy and delicious coffee popsicles and enjoy!!

Coffee Popsicles

INGREDIENTS
  PRINT RECIPE  
Heavy Whipping Cream/Half and Half cream - 1 cup
Milk - 1/4 cup
Instant Coffee Powder - 3/4 teaspoon
Powdered Sugar - 1/4 Cup
Chocolate Syrup - 1 tablespoon (optional)
Salt - a pinch
INSTRUCTIONS

1Boil the milk in a pan. Once it starts to boil, remove it from the stove. Now, take 3/4 teaspoon of instant coffee powder and mix it with a milk.

2Let the milk and coffee mixture cools down. Meanwhile take the cream in a bowl.

3Add 1/4 cup of sugar and a pinch of salt to cream. After that whisk the cream with a electric hand mixer or with a hand whisk till sugar dissolves.

4Add in the coffee mixture and the chocolate sauce to the cream.

5Beat the cream again with a mixer till everything is well combined. You don't have to beat the cream longer. Beat till all the chocolate sauce and coffee mixture are mixed well together. Now, pour this in to a popsicle mold.

6Insert the popscile sticks and freeze the popsicles for at least 7 hours or overnight. To unmold the popsicles, take the mold out of the freezer. Then pour warm water on the side of the mold or dip them into warm water. Take out the popsicle and enjoy.

NOTES

Adjust coffee powder to your taste because each coffee powder is different. Some of coffee powder may be strong in flavor and some may not.

Adding chocolate sauce is totally optional. I added here for an extra flavor and taste.

After you unmold all the popsicle, wrap them separately with wax paper and store it in the freezer

You can also replace cream with milk if you want.
