Gobi 65/Cauliflower- Cauliflower florets marinated in yogurt, chilli powder, gram flour, rice flour, ginger garlic paste and then deep fried. It is like the vegetarian version of chicken 65 recipe with minor differences. Veg lovers and non-veg lovers will both love this definitely. Our whole family loves this recipe. My mother-in-law also makes this recipe whenever we are get together.

Most people add all purpose flour and cornflour instead of rice flour and besan flour. But I always add gram flour and rice flour, it tastes very good. Serve it hot, don't let it sit for a long time after frying. Just note that we are going to put the cauliflower in the hot water just for a minute before marination. This helps to keep the cauliflower crunchy. Fry these and enjoy it as a appetizer with a lemon wedge and onion slices or have it as a side dish.

INGREDIENTS

Cauliflower - 1 head (medium), about 21/2 cups small florets
Oil - Enough to deep fry
For Marination:
Ginger Garlic Paste - 1 1/2 teaspoon
Gram Flour/Kadalai Maavu - 2 tablespoon
Rice Flour - 1 tablespoon
Chilli Powder - 2 teaspoon
Turmeric Powder - a pinch
Thick Curd/Yogurt - 1 tablespoon
Garam Masala Powder - 1/2 teaspoon
Salt - As required

1Cut the cauliflower into small size florets and keep it aside. Now, boil some water in a pot. Once it starts boiling, add the cauliflower florets and turn off the stove. Let the florets sit for a minute in the hot water. Do not keep it in hot water more than a minute.

2After a minute, strain the water and keep the cauliflower aside. Now, in a bowl take all the ingredients given under "For Marination".

3Mix them well with a spoon or with your hand. Now, add the cauliflower florets and mix till everything is well coated on the cauliflower. Marinate this for at least 10 to 15 minutes in room temperature or in the refrigerator.

4Heat enough oil to deep fry. Once it is heated enough, drop the cauliflower pieces into the oil carefully. Fry it till it becomes crispy and gets darker color.

5Now, take them out from oil and put it in a paper towel to absorb excess oil. Fry the remaining cauliflower florets. Fry them in batches. Crispy cauliflower 65 is ready. Serve hot!!

NOTES

Do not add too much besan flour in the marination masala. Otherwise it will create a layer around cauliflower like a bajji.

Marination masala has to be thick. So add thick curd. If you want you can add little bit of rice flour as well.

Do not dump the cauliflower into the hot oil for frying. It will drop down the temperature and will get soggy. Fry them in batches depending on the size of the frying pan.

Do not let the gobi 65 sit longer after it is fried otherwise it will loose the crispiness. Have it hot.
