Rava Upma - Rava upma is one of the quick breakfast recipe and it is a quite common recipe among south indian homes. It can be done within 15 minutes. Banana or sugar would be a perfect side dish for this upma. Coconut chutney also goes well with this upma.

Some dishes don't need any introduction at all. Rava upma is one of that kind. Every south indian might know this and make this very often. There were time when I hated rava upma but I realized the real value of upma after I started cooking :) because it it is one of the simple and quickest breakfast recipe. Rava upma is the one that comes to my mind first when I don't have idea of what to make for breakfast on some days. Also, this recipe may comes in handy when we feel lazy or in a hurry.

Coming to the texture of rava upma, my dad loves the fluffy upma rather than the lumpy upma. He specifically say this every time my mom makes it. I also makes it with the fluffy texture and with cashews and extra ghee whick makes this more tasteful. Most of the time I eat upma with sugar and sometimes with banana. Some people like to eat with coconut chutney too. Just make sure to serve this upma hot. Now, I am going to show you how I make rava upma..

INGREDIENTS

Rava/Sooji - 1 cup
Water - 1 1/2 cup
Onion - 1/4 cup, chopped finely
Green Chilli - 1, slitted
Curry Leaves - 1 sprig
Grated Ginger - 1/4 teaspoon
Mustard Seeds - 1/2 teaspoon
Urad Dal/Ulunthu - 1/2 teaspoon
Channa Dal/Kadalai Paruppu - 1 teaspoon
Cashews - 5, optional
Oil - 1 teaspoon
Ghee - 3 teaspoon
Salt - to taste
INSTRUCTIONS

1Chop the onion, slit the green chilli, grate the ginger and keep it aside. Next, heat a pan and add rava to it. Dry roast the rava over medium flame about 3 to 5 minutes till it becomes aromatic without changing its color . Mix it often to get roast evenly.

2After that, transfer roasted rava to a dry plate. In the same pan, add a teaspoon of oil. Once it becomes hot, add mustard seeds, channa dal, urad dal and cashew. Stir it for few seconds till all roasted and turn into golden brown in color. Now, add in the slitted green chili. Allow it to fry for a sec.

3Next, goes in half of the curry leaves and chopped onions. Stir and let it cook till onion becomes soft. Now pour in the water to the pan, a teaspoon of ghee and enough salt to it. Adding ghee at this stages helps to get a fluffy upma. Also, add the remaining curry leaves to the water.

4Once the water starts boiling, reduce the flame to low. Add in roasted rava little by little at a time and mix it without lumps. Once you added all the rava, mix it continuously. Now increase the flame back into medium.

5In the next few minutes rava will absorb all the water and it will come together. Now add the remaining 2 teaspoon of ghee. Continue mixing it till you get a fluffy upma. Rava upma is now ready!! Have it hot.

NOTES

Adding ghee in the water helps to get the fluffy upma not a lumpy upma.

Added half of the curry leaves while tempering and the remaining half of them in the water. Adding curry leaves to water gives a fresh curry leaves taste to the dish.

Increase water into 2 cups if you don't like fluffy upma.

I used coarse rava here but you can also use fine rava too.
