Nei Kadalai/Chatpata Channa Dal - Soaked channa dal deep fried and seasoned with few spices. It is a crunchy and savory tea time snack which is popular in south india. After you make this snack consume immediately or store it in an airtight container to retain the crispiness. It will stay crispy for a week to ten days.

Now, I am recalling all the good snacks from the childhood and trying to make it. You too make this snack and enjoy it with your evening tea or coffee. Of course, you can also eat it any time a day. INGREDIENTS

Kadalai Paruppu/Channa Dal - 1 cup
Garlic Cloves - 3
Curry Leaves - about 20
Asafoetida - 1/4 teaspoon
Chilli Powder - 1/2 teaspoon
Salt - about 1/4 teaspoon
Oil - enough to deep fry

1Wash the kadalai paruppu/channa dal well for 2 times, then soak in enough water for 3 to 4 hours. After that drain all the water.

2Then spread all the dal in a tissue paper or clean cotton cloth. Allow it dry for 30 minutes in shadow. Do not dry it under sun. After 30 min check if all the water is dried out.

3Gather all the paruppu in a bowl. Keep it aside. Meanwhile crush the garlic cloves into small pieces and keep curry leaves, chilli powder, salt, asafoetida ready. Now, heat enough oil to for deep frying.

4When the oil is hot enough, add small amount of channa dal. Do not add all at once. When you add the channa dal to the oil, oil will starts to foam and you can hear a loud sizzle and sputtering sound. Fry it in high flame, stir it in between for 15 min or till all the sizze and sputtering sounds vanishes and the dal will become golden brown. Then collect every fried dal from oil with the help of a ladle which has holes.

5Put it in the paper towel to remove any excess oil. In the same way, fry the remaining channa dal and put it in paper towel. After all your batches are done, reduce the flame to low. Add curry leaves in the same oil carefully. When it stops splutter remove the curry leaves from the oil and put it along with the fired dal.

6Then fry the crushed garlic with skin in the same oil. After it is fried and becomes golden brown, remove them and put it along with dal and curry leaves.

7Now, add the fried ingredients in a mixing bowl. Add in the asafoetida, chilli powder and salt to taste. Mix well with a spoon or toss well. Nei kadalai is now ready!!

NOTES

Do not dumb all the channa dal to the oil at once. Fry it in two or three batches.

Soaking time is very important, it should be soaked for at least 3 to 4 hours.

Adjust chilli powder according to your taste buds.

Remove excess oil by tapping the channa dal with a tissue paper well before seasoning them.

If you want, you can also add chat masala for seasoning.

For extra taste and flavor, you can fry some peanuts in the same oil and add.
