Chicken Nuggets - is the favorite snack of most people. Chicken breast pieces marinated in buttermilk and coated in flour, then dipped in the egg mixture and coated again in breadcrumbs, then fried into perfection. It is crispy and tender inside. It can be easily prepared at home. You don't have to go out and buy these.

While making chicken nuggets, first part is marinating the chicken pieces in the buttermilk. This helps the chicken to be tender and retain it's moisture after frying. If you don't have enough time for marination, you can totally avoid the step. But add chilli powder in flour instead of adding it in buttermilk and proceed to next step. For 5 to 6 people, one chicken breast is enough. Seasoning plays a very important role here. Season everything like breadcrumbs, flour and eggs.

The beauty of this recipe is you can make this ahead and freeze them. Just put it in the ziplock bag, seal it and then keep it in the freezer. Freeze it in small portions in separate ziplock bags. So that you can take out one bag and thaw it easily. Fry it whenever you are craving for junk food or whenever guests coming to your house.

It will stay good for more than 15 days to a month. Trust me, it won't stay that much longer. We usually will finish it within a week. Now, let's go and make some crispy chicken nuggets..

INGREDIENTS

Chicken Breast - 1 (around 425 grams)
Buttermilk - 3/4 cup
Chilli Powder - 2 teaspoon
Ginger Garlic Paste - 1 teaspoon
Turmeric Powder - a pinch
Egg - 1 large
Water - 1/2 tablespoon
Salt - as required
Flour Mix:
All purpose flour/Maida - 1/2 cup
Onion Powder - 1/2 teaspoon
Garlic Powder - 1 teaspoon
Pepper Powder - 1/4 teaspoon
Salt - little for the flour
Breadcrumbs Mix:
Breadcrumbs - 3/4 cup
Italian Seasoning - 1 teaspoon
Crushed Black Pepper - 1/4 teaspoon
Salt - little for the breadcrumbs
INSTRUCTIONS

1Wash the chicken breast and pat it well with a paper towel to dry the moisture. Then cut it into equal bite size pieces.

2Take a bowl and add buttermilk, chilli powder, ginger garlic paste and required salt for chicken. Mix it well. Then add the chicken pieces to it.

3Mix it well and cover it with a cling wrap or a plate. Keep it in the refrigerator for minimum 2 hours to overnight. This will help the chicken to be tender after it is fried.

4Take all ingredients given under Breadcrumbs Mix and add it to a plate. Mix it well and keep it aside. Now in an another dry plate, take all the ingredients given under Flour Mix. Mix this well and keep it aside.

5In another bowl, add egg, water (1/2 tablespoon) and little salt. Mix it well and keep aside. Now, take the chicken out of the refrigerator and drain the excess buttermilk and discard it.

6First, Take the chicken pieces and coat them in the flour by rolling them in the flour mix. Repeat this for all the remaining chicken pieces and keep it aside. Now wash your hands. Using one of your hand, take a chicken piece and dip it in the egg mixture. Then place it in the breadcrumbs mix plate.

7Now use your other hand, coat the chicken pieces evenly with the breadcrumbs and place it in a plate. Using separate hand helps to prevent the messiness and avoids wastage of flour and breadcrumbs. Repeat these steps for all the remaining pieces.

8Now, heat enough oil for frying. Once it becomes hot, add the chicken pieces. Let it fry for a minute on one side over medium flame.

9After one minute carefully flip the pieces and cook it for another 1 to 1 1/2 minute or till it becomes nice golden brown. Now, take it off from the oil and put in a paper towel to get rid of any excess oil. Fry the remaining nuggets also. Crispy and hot chicken nuggets ready!!!

NOTES

Using one hand for dipping in egg and another hand for coating breadcrumbs makes the work easier. Also, the wastage will be minimal.

Fry the nuggets in small batches, otherwise the temperature of the oil drop and the nuggets will become soggy.

Chicken will get cooked between 2 and 2 1/2 minutes. Do not over cook them.

Adding italian seasoning will increase the flavor of the nuggets. If you don't have, skip it.

Seasoning the flour, breadcrumbs and egg with little bit of salt is important. Do not over season it, remember we already have added enough salt in the buttermilk for the chicken.
