Avial - Avial is the most famous recipe in south India. It is the side dish and it is made with mixed vegetables and ground coconut. This is one of the item we choose to make it on a auspicious days especially on pongal day. Since pongal is a harvest festival, we offer all the vegetables as a thanksgiving to nature god and avial is one of the important dish we make it on that day. This dish will also be served in many marriage functions in Tamil Nadu.

Avial is one of my favorite recipe. In fact I am an addict to avial. Whenever my mom makes I am the one who eats most of it. I will also eat it in the evening as a snack if there are any left overs. So my mom always makes little extra especially for me:). I usually add yogurt/curd and mix it before eating but my husband likes the avial without curd. Today, I am going to share the avial recipe without curd. This will be perfect with rice but if you are going to have it with adai then you need to add curd and make little bit of semi gravy type. I will share that recipe too later however there is not much difference between those two.
Here I am adding drumstick, carrot, beans, potato, raw banana and green peas for the avial. But you can also add yam, white pumpkin and bottle gourd. Now, let's make yummy avial..

INGREDIENTS

Mixed Vegetables - 3 cups, (drumstick, carrot, beans, green peas, potato and raw banana)
Salt - to taste
To Grind:
Coconut - 1/2 cup, grated
Green Chilli - 2
Cumin Seeds - 1 teaspoon
To Temper:
Coconut Oil - 2 teaspoon
Mustard Seeds - 1/2 teaspoon
Curry Leaves - 1 sprig
Turmeric Powder - 1/4 teaspoon
INSTRUCTIONS

1Wash and peel the skin of carrot, potato and raw banana and cut them into 1 inch pieces. Trim the end of beans, drumstick and cut them also into 1 inch pieces. Now, add all the chopped vegetables, green peas with enough salt to a bowl/pot which can fit inside the pressure cooker. Add little water in the pressure cooker and the cooker plate. Now place the vegetable bowl/pot inside the pressure cooker. (Alternatively, you can steam the vegetables in a idli plate or cook it straightly in the pressure cooker with water)

2Close the pressure cooker lid and put the whistle on. Cook it in medium flame for 4 to 5 whistles. After that let all the steam go away by itself. Meanwhile, take the ingredients given under "To Grind" in a mixer.

3Add little bit water and grind into a coarse paste then keep it aside. Now, open the pressure cooker and take the vegetables out. Check if all the vegetables are cooked otherwise cook it for another whistle.

4Now, heat a pan with coconut oil. Once it becomes hot add mustard seeds, let it splutter. Now add curry leaves carefully and turmeric powder over low flame. Allow it fry for few seconds. Now, add all the cooked vegetables and turn the flame to medium. Stir all the vegetables for a minute.

5Now add the ground coconut paste and mix it well. Let it cook for few seconds and switch off the stove immediately. Do not cook for long time after you add coconut paste. Now avial is ready to eat.

NOTES
I used bowl/pot in the pressure cooker to cook vegetables. It prevents the vegetable become mushy. But alternatively you can boil the vegetables or steam cook the vegetables in the steamer or in the idli plate.
You can increase or decrease the ground coconut quantity slightly if you want.
You can also add yogurt/curd to this dish after switching off the stove.
Coconut oil gives a good flavor to this dish. If you don't like coconut oil, replace it with regular cooking oil.
