Pineapple Popsicle - Creamy popsicle made by blending pineapple chunks, coconut milk and condensed milk then poured and froze in popsicle molds.

Pineapple popsicle is a perfect frozen dessert in hot summer. This will be creamy in texture because of coconut milk and condensed milk. Here I added freshly extracted coconut milk (homemade) for this recipe. Alternatively you can use canned coconut milk to make it easier.

Adjust sweetness according to your taste buds. Here I added condensed milk to get a creamy texture. If you don't have condensed milk, replace it with sugar. I find that sweetness gets decreased once the popsicle is frozen. So I suggest you to taste the mixture before pouring into the molds. If it needs more sugar, add it. Now let's go and make some ice pops to cool ourselves..

INGREDIENTS

Pineapple Chunks - 1 cup
Coconut Milk - 1 cup
Condensed Milk - 3 tablespoon
Salt - a pinch

1Cut the pineapple and remove the flesh from it. Remove the center core of pineapple and discard it as this it is very hard. Roughly chop the pineapple pieces. Keep it aside. Extract coconut milk and keep it ready or use canned coconut milk. In a blender add coconut milk, pineapple chunks and condensed milk.

2Blend everything till it well combined and become a smooth mixture. Do not blend too much. Transfer this mixture to a cup or tumbler for pouring this easily to the molds. Take your popsicle molds.

3Now, pour this blended mixture to the molds. Just fill them till the level of fill line in popsicle mold.

4Fill all the molds and cover them. Put these in the freezer for minimum 7 hours to overnight.

5When you are going to eat, take water in a glass/tumbler. Dip one mold into the water for few seconds. Then with the help of the popsicle stick, just slightly wiggle it then remove the popsicle. It should come easily out of the mold. If it is not coming out, dip it in the water for few more seconds and try again. Enjoy the popsicle.

NOTES

Here I added freshly extracted coconut milk but you can also add canned coconut milk.

Adjust sugar depending on your taste buds. If you don't have condensed milk, add sugar. But adding condensed milk gives this popsicle a creamy texture.

Do not blend the mixture too long in the blender. Otherwise oily flavor will slightly come from coconut milk. To avoid that you can first puree the pineapple chunks with condensed milk, then add coconut milk and blend it for few seconds.
