Toasted Walnut Pesto Pasta - Cooked pasta mixed with pesto sauce that is made with toasted walnuts, cilantro, garlic, green chilli, parmesan, lemon juice and salt. A subtle and delicious meal which everybody will like.

I love pasta generally and I was making indian style pasta for a long time. Now being here in USA and watching lot of TV shows, I learned lot of dishes from different cuisines. Pesto pasta is one of that kind I heard it from cooking shows. So I wanted to give it a try.

Traditionally pesto sauce is made with pine nuts and basil. But I modified this to Indian taste by replacing it cilantro leaves, blanched almonds and green chilli. This is how I made pesto pasta many times. After a while I wanted to try it with walnuts and it came out delicious. Now I am making this toasted walnut pesto pasta often.

There are few things you have to consider while cooking pasta. You have to add lots of water to cook pasta. Otherwise the starch from the pasta will stick together, it won't cook evenly and won't taste good either. So make sure add lots of water in a big pan to cook pasta. Also add in enough salt in the water. If you taste the water, it has to be little bit salty. Another thing is add salt after the water starts boiling and then the pasta goes in. Remember these techniques while you cook any type of pasta. There are many types of pasta available penne, fettuccine, macaroni, farfalle etc... I chose farfalle or bow-tie pasta for this recipe. You can make this with any type of pasta you like.

INGREDIENTS

Farfalle Pasta - 3 cup
Water - 8 to 9 cups (to cook pasta)
Salt - approx 3 teaspoon
Crushed Pepper - 1/4 teaspoon
For Pesto Sauce
Coriander Leaves - 1 cup
Walnut - 1/4 cup
Garlic - 2 cloves
Green Chilli - 1
Lemon Juice - 1 teaspoon
Parmesan Cheese - 2 tablespoon
Salt - to taste
For Garnishing
Parmesan Cheese - about 1 tablespoon
Grape Tomatoes/Cherry Tomatoes - 10 to 15 (halved)

1Boil water (approx 8 cups) in a big pan. When it comes to rolling boil, add salt to the water. Then add pasta to the water. Allow it to cook on high flame.

2If your pasta want to be well cooked, it may take around 15 min. You can check the pasta between 12 min to 15 min. When it cooks perfectly, take 1/4 cup of pasta water from the pan and keep it aside.

3Now, drain the pasta. Keep it aside. Meanwhile for the pesto sauce, heat a pan. Then add the walnuts and toast well on medium flame. Stir it frequently to get nice even color and to avoid burning.

4This may take around 3-4 min, you will get a nice nutty aroma when it is done. After that remove it from heat and transfer to a plate, let it cool down. After that chop the walnuts into small pieces. Chopping is optional though I find this makes easy to grind in the mixer. If you are using a food processor, skip the chopping and add the whole nuts into the food processor.

5Clean the cilantro/coriander leaves and chop them roughly. Also, chop green chilli and garlic into small pieces. Now take chopped walnut, green chilli, garlic, coriander leaves along with lemon juice and parmesan cheese (2 tablespoon) in a blender/mixer or food processor.

6Pulse it a few times and then add olive oil (2 tablespoon), little salt for pesto sauce. Grind this to smooth or little coarse. Pesto sauce is ready. Now heat a pan with a tablespoon of olive oil. Add in the pesto sauce, saute it for few seconds.

7Then throw in the cooked pasta and mix everything. At this stage add the reserved pasta water if you feel your pasta is little dry. Otherwise you don't need to add. Now for the seasoning, we already added salt for pasta while boiling and for pesto too. So taste, add little salt if needed. Add pepper powder and give it a stir. You don't have to cook much longer, just for a minute or two till everything is well combined together. Now switch off the stove. Pasta is ready to serve. Serve the pasta topped with grape or cherry tomatoes and grated parmesan. Yum!!

NOTES

Do not add water while grinding pesto sauce. It won't be good at all.

If you don't want cheese, simply skip it. But it will taste fantastic with the cheese.

Adjust pepper powder to your taste.

If you have any leftover pesto, use it as a spread in sandwiches. You can also make this sauce a little thin by adding more oil and drizzle it at the top of the pizza as a finishing sauce or as a main sauce.
