Pasi paruppu sambar/Tiffin sambar - It's a easy and quick tiffin sambar. It goes well with idli and dosai. You can also have this venpongal with coconut chutney. You don't even have to add any vegetable to this sambar.

Okay, What can I say about sambar? It is an everyday south indian dish. There are many sambar varieties. We will see one by one in my blog. In this post I am going share a tiffin sambar, which can be prepared with pasi paruppu or toor dal. Both my mom and mother-in-law makes the one with pasi pauppu very often. My mother-in-law makes this pretty much every time she makes idli. My husband is a very big fan of this sambar. Me too :) Hot soft idli with this sambar and coconut chutney will be divine.

In this sambar final tempering is very important. You have to fry the onions till it becomes golden brown. That is the key step that makes this sambar even more delicious. Try it and tell me how it turns out in the comment section.

INGREDIENTS

Moong dal/Paasi Paruppu - 1/2 cup
Water - 2 1/2 cups (adjust)
Tomato - 1
Garlic - 2 cloves
Green Chilli - 2, slitted
Turmeric Powder - 1/2 teaspoon
Sesame Oil - 1/2 teaspoon
Asafoetida - 1/4 teaspoon
Tamarind - a small size ball (about 1 teaspoon)
Chilli Powder - 1 teaspoon
Cumin Powder - 1/2 teaspoon
Coriander Leaves - 2 tablespoon
To Temper
Cooking Oil - 2 tablespoon
Mustard Seeds - 1/2 teaspoon, chopped
Curry Leaves - 1 sprig
Onion - 1/4 cup, chopped
INSTRUCTIONS

1Take a pressure cooker with pasi paruppu , wash it well for two times. Add chopped tomato, chopped garlic cloves, slitted green chilli, turmeric powder, asafoetida, sesame oil.

2Add 2 1/2 cups of water and close the lid, put the whistle. Pressure cook it for 4-5 whistles. After that switch off the stove. Don't open the lid immediately. Allow pressure cooker to release all the pressure by itself.

3Now, meanwhile soak a small piece of tamrind in warm water. Let it soak for 10 minutes. After that extract all the juices and strain it. Keep it aside.

4After all the pressure released from the cooker, open the lid. Add another half a cup of water, pour extracted tamarind juice and bring to a boil.

5Once it starts boiling, add in enough salt, chilli powder and cumin powder. Cook the sambar for 5 minutes. Add chilli powder and cumin powder straightly to the sambar or to make it easy to dissolve take little sambar in a laddle and add the powders in it, mix it with a spoon. Then add it to the sambar.

6After 5 min, add chopped coriander leaves. Remove the sambar from the stove immediately. Now to temper this, heat a dry pan. Add oil, once it is hot enough add mustard seeds. Let it splutter. Then add finely chopped onion to it.

7Fry the onions till it becomes golden brown. Now finally add the curry leaves and give it a stir. Then pour this straight into the sambar. Tiffin sambar is ready to be served.

NOTES

Frying the onions till it becomes golden brown as shown in step 7 makes the sambar taste more delicious.

Whenever you cook dal or paruppu, cook it with turmeric, asafoetida and a little bit oil (preferably sesame oil). It will give a nice texture and flavour to the dal. This is a technique I learned it from my mom.
