Moong dal vadai/Moong dal pakora - Deep fried vadas that made with ground moong dal mixed with onion, green chilli, asafoetida, curry leaves, salt, coriander leaves.

It is a quick and tasty tea time snack to munch on. It will be crispy on the outside and soft on the inside. The only time taking step in this recipe is the soaking time. Other than that you can fry these golden vadas in no time. Make it and enjoy it with coconut chutney or green chutney.

Grinding the moong dal to a correct consistency is more important. If you want your vada light and airy, don't grind the dal too much. Grind it to a slightly coarse mixture with very little water(about 2 teaspoon or so). I find that if the vada batter is smooth, it will be dense on the inside. So just pay attention when you grind the dal. With this note, let's move on to the recipe.

INGREDIENTS

Moong Dal/Paasi Paruppu - 1/2 cup
Chopped Onion - 1/2 cup
Green Chilli - 1
Grated Ginger - 1/2 teaspoon
Asafoetida - a generous pinch
Crushed Black Pepper - 1/4 teaspoon
Curry Leaves - 1 sprig
Chopped Coriander Leaves - 1 tablespoon
Baking Soda - a generous pinch
Salt - to taste

1Wash the moong dal with water for 2 to 3 times. Then soak it with enough water for 3 to 4 hours.

2Meanwhile chop onions, green chilli and coriander leaves. Grate ginger and crush pepper also. Keep this aside. Now, drain the water from moong dal and add it to the mixer.

3Grind the dal into slightly coarse paste with just about 2 teaspoon of water. Take the ground mixture in a bowl along with chopped onion, green chilli, curry leaves, coriander leaves, grated ginger, crushed black pepper, asafoetida, salt and baking soda.

4Mix everything well together. Next heat enough oil to deep fry the vadas. Oil should be on medium heat. Otherwise, vada will get brown quickly and won't cook inside. To check the oil is hot enough, take very little vada batter and drop it into the oil. It has to sizzle and then slowly come up. Now the oil is ready. Take a small amount of vada batter about a tablespoon, carefully drop it into the oil.

5Cook it till it becomes golden brown all the sides and crispy. After that put in a absorbent kitchen towel to remove the excess oil. Fry the remaining also in batches. Serve moong dal vada with coconut chutney or green chutney.

NOTES

Do not add lot of water while grinding moong dal. Just about 2 teaspoon of water is enough.

Do not grind moong dal too much, otherwise the vada will be dense inside. Grind it into a slightly coarse.

Adjust crushed pepper and green chilli as per your taste.

You don't need to shape the vada when frying. Just take small amount of batter and drop it straightly into the oil.
