For this recipe, choose well ripen and less fibrous mangoes. You can chop mangoes very finely or even puree them to make the job easier and add to the kesari. Also adjust sugar as per your taste buds. If the mangoes are very sweet, reduce the sugar amount. Now, lets get into the recipe..

INGREDIENTS

Rava/Sooji - 1/2 cup
Ripe Mango - 1/2 cup, chopped or pureed
Sugar - 1/2 cup
Hot Water - 1 1/2 cup
Ghee - 3 to 4 tablespoon
Cardamom - 3 nos, powdered
Saffron - few strands (optional)
Cashews - 10
Raisins - 10

1Chop the ripen mango into small pieces and keep it aside. Then take a few strands of saffron and soak it in a tablespoon of warm water and keep this aside. Now, heat a pan with a tablespoon of ghee, add cashews. Roast it till it becomes nice golden brown. Transfer the cashews in a bowl. Next add raisins and roast till it puffs up. Transfer these also in the bowl with cashews.

2Transfer only cashews and raisins to the bowl. Keep the ghee in a pan. In the same pan add rava/sooji. Roast it till it slightly changes its color and becomes aromatic. Stir it continuously to get evenly roasted.

3Now, pour the hot water slowly. Keep mixing the rava and water while you add hot water. To avoid the lumps forming, keep mixing it till it becomes smooth. Cook this rava mixture for a minute in a low flame.

4Now the rava gets cooked. Add sugar to this. Mix it well till all the sugar melts. If lumps are forming, just break it with the help of a back of a spoon.

5After the sugar melts and well combined, add saffron water and cardamom powder. Add a tablespoon of ghee and add the chopped mangoes.

6Mix everything. The juice from the mango will ooze out. Mix continuously till the kesari slightly thicken. Finally add the roasted cashews and raisins and mix well. When you mix the kesari, it has to separate from the pan without sticking. Now the kesari is ready to enjoy.

NOTES

Add finely chopped mangoes or even mango puree to make the kesari little quicker. I added a small sized pieces here because I like the tiny mango bites gets into every spoon I eat.

If you cook the kesari too long, then it will be hardened. If you cook for less time, it will be watery. So cook it till it reaches the correct consistency. When you mix the kesari, it has to separate from the pan without sticking to the pan and at the same time if you pour the kesari, it will slowly fall.
