Mutton Paya/Aatukal Paya is the famous non-vegetarian recipe in south india. This gravy is prepared with goat leg pieces. It can go well with white rice, idiyappam, aapam, idli and dosai. Though it is nutritious, it is high in fat so consume in moderate level.

Cooking paya is a time taking procedure, it has to cook for an hour. So make this when you have time. Mutton lovers will definitely love this dish. In India, meat shops sell paya that are grilled in the flame to remove all the hair from the leg pieces. After you buy these grilled leg from the shop, just scrape the bones little bit and wash it then start cooking by following the recipe below from step #2.

Here in USA, halal shops remove hairs using machines, also they are selling two types of paya one with skin and another without skin but they are not grilled like in India. I am using paya without skin for this recipe as the halal shop only had paya without skin this time. The cooking method is same for both paya with or without skin.

I am going to grill it in the oven before cooking to get the grilled flavor from paya like in India. The texture and flavor are much better with this method. Pretty much every house in US have the conventional oven. So try this method, I am sure you will like it this way. If you don't have an oven, just skip this step and proceed from step #2 in the follwing recipe. Here is the recipe for paya lovers..

INGREDIENTS

Paya/Goat Leg - 1/2 kg
Pearl Onion - 15 to 20, sliced thinly
Tomato - 2 big size, chopped
Ginger Garlic Paste - 2 teaspoon
Turmeric Powder - 1/2 teaspoon
Chilli Powder - 2 teaspoon
Coriander Powder - 3 teaspoon
Cumin Powder - 1/2 teaspoon
Fennel/Sombu Powder - 1/2 teaspoon
Garam Masala Powder - 2 teaspoon
Curry Leaves - 10 leaves
Coconut Paste - 1/4 cup
Gingelly Oil - 2 tablespoon
Salt - to taste
INSTRUCTIONS

1Preheat the oven in broil mode for 5 to 10 minutes. Meanwhile, wash the leg pieces well. Then add a 1/4 teaspoon of turmeric, mix well. Once again wash it with water. Drain all the water. After that add 1/2 teaspoon of chilli powder, 1/4 teaspoon of turmeric powder and mix well. Then arrange the pieces in a cookie sheet. Place this cookie sheet in a oven for 10 to 15 minutes. Once it starts to change color and grilled well, remove it from the oven.

2Add these grilled leg pieces in a pressure cooker along with little bit of chopped onion ( about 2 tablespoon), crushed pepper (about 1 teaspoon). Pour water till all the pieces are immerse in water. Then close the lid and put the whistle. Pressure cook it for 1 hour over medium flame. After that let the pressure release by itself, keep it aside.

3Now, heat a pan with oil. Once it is hot enough, add chopped onion. Saute it till it becomes soft. Then add the curry leaves. stir it for few seconds.

4Add in ginger garlic paste, stir it. After the raw smell of ginger garlic paste goes off, add the chopped tomatoes.

5Saute it till the tomatoes get mushy. Then add all the spice powders (remaining 1 1/2 of chilli powder, fennel powder, cumin powder, garam masala powder), give it a stir for few seconds. Do not burn the powders.

6After that add the cooked leg pieces along with all the water used for cooking legs. At this stage add required salt for gravy, add water if the gravy is thick. Mix it, close the lid. Let it boil for 10 minutes. Once the oil from gravy starts floating at the top as shown in the picture below, gravy is almost ready.

7Finally add the coconut paste, mix it. Once it starts to boil, switch off the stove immediately. Goat paya is ready to serve.

NOTES

Cooking time for paya is very important. Cook it for anywhere between 45 minutes to 1 hours. So that the flesh will be soft and cooked all the way through. Remember to add enough water to cook.

No need to add lot of oil to this gravy because paya itself has lot of fat in it.

If you don't have an oven at home skip the step #1 and follow the recipe from step #2.
