Whole Fish fry - Whole fish like pomfret or pampano cleaned and marinated with lot of spices like chilli powder, ginger garlic paste, coriander powder etc then shallow fried. It can be served as a starter. You can also make it as a side dish for lunch with rice and fish kuzhambu or rasam.

When I first tasted this in a restaurant, I decided that I have to make this at home. I tried it at home and it came out very well. I often make this on a Sunday afternoon. We love to have this as a starter served with a lemon wedge and some onion slices. This will gives us a kind of feel like having a special dish at restaurant. :) Sometimes I will make just rice and rasam and have this delicious fish fry as a side dish.

Usually in restaurant, they use pomfret for whole fish fry. I usually use both pompano and pomfret. Today, I am making it with pampano. And there's another thing. Since I am making it like restaurant style, I prefer to keep the head on though we don't eat. If you don't want, you can cut it. It's up to you. Let's see how to make yummy restaurant style whole fish fry!!!

INGREDIENTS

Whole fish - 2 nos (300 gms)
For the Masala:
Ginger Garlic Paste - 1 1/2 tsp
Chilli Powder - 1 1/2 tbsp
Coriander Powder - 2 tsp
Garam Masala Powder - 1/2 tsp
Turmeric Powder - 1/4 tsp
Lemon Juice - 1 tbsp
Besan Flour/Kadalai Maavu - 2 tsp
Rice Flour - 1/2 tsp
Salt - as required
Oil - enough to shallow fry fish
INSTRUCTIONS

1Clean the fish, wash well and put 3 to 4 slits like below. Keep aside. Take all the ingredients under for the masala(ginger garlic paste, chilli powder, coriander powder, garam masala powder, besan flour, rice flour, turmeric powder, salt, lemon juice) in a bowl or plate, mix well.

2Apply the mixed masala on the fish. Spread the masala evenly and apply it into the slits very well.

3Marinate the fish for minimum 30 minutes. After that, heat a pan, add required oil to shallow fry. When oil is hot, carefully drop one fish.

4Cook it for 3-4 min on each side over medium flame. Carefully pour hot oil on top of the fish and slits using a spoon. Once the fish is cooked on one side carefully flip to the other side. Cook it 3-4 min. Then gently remove the fish from the pan. Fry the other fish also.

NOTES

Marination is a very important part. The longer you marinate the taste will be good.

The chilli powder I used is not that much spicy so I am adding 1 1/2 tbsp. You can adjust chilli powder according to your taste buds.

Cook and flip the fish carefully when you frying. If you flip it vigorously, oil will splash. So do it gently.

Here, I did shallow fry the fish. If you wish, you can deep fry it.

Cooking time may vary depending on the size of the fish.
