Tomato Rice/Tomato Biriyani - Raw rice cooked with sauteed onion, tomato, ginger garlic paste, chilli powder and with some whole spices. It's a yummy and common lunch menu in most of south indian houses. It can be eaten as it is. You can also have this with raita or coconut chutney or potato varuval or simply with potato chips.

Though pretty much every home cook in tamilnadu knows how to make tomato rice, the taste will differ depending on how much you cook the tomatoes. A lot of people cook the tomatoes till mushy then add their rice. If you want to make yummy tomato rice (like biriyani), you will have to cook the tomatoes till it becomes like thokku, also at this stage tomato skin becomes wrinkled and separated from the pulp. In this method we will get a nice aromatic tomato rice. If you didn't know this already, try this method and you will love it. Hope this recipe also helps new cooks/beginners. Now, let me show you how I make tomato rice.

Prep Time: 30 min(soaking time) | Cook Time: 30 min

INGREDIENTS

Raw Rice - 1 cup
Water - 2 cup
Bay Leaf, Star Anise - 1 each
Cinnamon - 1/2 inch piece
Cardamom, Cloves - 2 each
Fennel Seeds - 1 tsp
Onion - 1 medium size(sliced)
Tomato - 2 (about 1 cup sliced)
Green Chilli - 1 (slitted)
Ginger Garlic Paste - 1 1/2 tsp
Ghee - 1 tbsp
Oil - 1 tbsp
Salt - to taste
INSTRUCTIONS

1Wash the rice well for 2 to 3 times and soak it for 30 minutes. Then heat a pressure cooker. Add in ghee and oil. Once oil is hot, add all the whole spices (bay leaf, cinnamon, cardamom, cloves, star anise and fennel seeds).

2Fry it for few seconds without burning. Then add the slitted green chilli and sliced onion. Fry the onion till it becomes soft. Now add in the ginger garlic paste. Cook it till the raw smell goes off.

3After that add sliced tomatoes. Cook the tomatoes well till it becomes mushy. After that add chilli powder, mix it.

4Cook tomatoes further till the water content in tomatoes get reduced well. Also you can see the oil is coming out now and the skin of tomatoes separate are from the pulp at this stage. Now add the soaked rice(drain the excess water).

5Add 2 cups of water and enough salt. Close the lid and put the whistle. Cook it for 2 whistles.

6Open the pressure cooker after all the pressure is released. Mix the rice gently. Now it is ready to serve.

NOTES

Use raw rice (pacharisi) for this recipe. You can also use basmati rice but cook it with 1 1/2 cup of water instead of 2 cups.

Always use well ripen tomatoes for this recipe. That works best and gives a nice red color to the dish.
