Spinach/Palak Chapathi - Whole wheat flour along with enough salt, water and spinach puree kneaded into a smooth dough then it is rolled and cooked in a griddle. It is a very healthy dish, enjoy it with your favorite curry/gravy.

I would prepare this dish whenever I want to incorporate spinach in a simple dish. This is a good way of adding spinach into your food. Usually we have this dish for breakfast, you can have it for lunch too. Today I am making the spinach chapathi but you can also make spinach poori. Blanching the spinach leaves before making puree helps to prevent the raw smell coming from chappathi while you eat. In this way, everybody will like it even the kids. Now, lets go to the recipe..

INGREDIENTS

Whole Wheat Flour - 1 1/2 cup
Spinach - 1 small bunch (about 1 1/2 cup)
Salt - to taste
Oil - 1/2 tsp
Water - as needed
Additional wheat flour - for rolling chapathi
Oil/Butter - for spreading
INSTRUCTIONS

1In a bowl/plate, add wheat flour and required salt. Keep it aside. Boil water in a pan. Meanwhile clean the spinach leaves, trim the leaves from its stem.

2Once water starts boiling, add the spinach leaves. Stir it once. Just blanch the spinach leaves that means don't leave it in the boiling water more than a minute. Once spinach starts to get bright green color, switch off the stove. Then drain all the hot water. Add the cooked spinach leaves to cold water. This will stop the cooking process and help to retain its bright green color.

3Leave it for few seconds. After that drain all the water and puree the spinach with little water in blender or mixture. Add this spinach puree to the wheat flour.

4Also, add 1/2 tsp oil, required water and knead into a smooth dough. Keep it covered and let it rest for 10-15 min. Now, make small equal sized balls out of the dough.

5Take one ball at a time and roll it into round shape with rolling pin. Spread some flour to avoid sticking it in the board/rolling pin. Roll all these at once and cook chappathis or roll and cook chapathis one by one.

6Heat a iron griddle(dosai pan). Once it is nice and hot, place the rolled chapathi. Let it cook, flip it after you see some small bubbles on the top. Cook the other side also. You can see some brown spots after its cooked.

7Now, transfer these into a plate/hot pack and spread few drops of oil or butter to prevent the chapathi from drying. Cook all the remaining chappathis. It's now ready to serve with any of your choice of curry.

NOTES

You can also add little bit of sugar in the boiling water with spinach leaves for retaining its bright green color.

If your chapathi dough is little bit sticky, spread flour on the chapathi or on the board while rolling.

If you cook and flip it in correct time, chapathi will puff up(like the picture in step 7).

I did not add oil while cooking the chapathi because it may not puff up. But you can add oil while cooking, chapathi will be soft in this method too.
