Neer Mor|Spiced Buttermilk is a very popular summer drink in Tamilnadu. In many parts of tamilnadu and in my hometown, many shops and individuals will setup a panthal (small tent like a stall) and offer this mor and panakaram freely for everyone during chithirai festival. Chithirai festival is celebrated in the month of April which is when summer starts in India. Many visitors and devotees comes to see the festival and this free drink helps them to quench their thirst.

Each person prepares this item differently. Some may temper it and some even add lemon juice to it. You can make this as per your preference. Here, I am adding lemon juice to the mor which adds nice flavor and taste to it. I am also tempering it with mustard seeds, curry leaves and asafoetida. This kind of mor is also served in the marriage feast. Try this version and I am sure you will love this.

INGREDIENTS

Curd/Yogurt - 1/2 cup
Water - 2 1/2 cups
Ginger - a small piece (about 1 tsp crushed)
Green Chilli - 1
Coriander Leaves - 1 tbsp
Lemon Juice - 1 to 2 tsp (adjust to taste)
Salt - to taste
To Temper
Sesame Oil - 1 tsp
Mustard Seeds - 1/4 tsp
Curry Leaves - 1 sprig
Asafoetida - a generous pinch
INSTRUCTIONS

1Take yogurt in a bowl. Whisk it till it becomes smooth with a hand whisk. Then add 2 to 2 1/2 cups of water to it. Mix it well with the whisk.

2Crush the ginger and green chilli, add it to the yogurt water mix. Also, add in enough salt and chopped coriander leaves. Mix everything well.

3Now, heat a pan with oil. Once it is hot, add mustard seeds, curry leaves. Let it splutter, then add the asafoetida and stir it for few seconds. Do not burn it. Then switch off the stove. Add these tempering to the yogurt water mix.

4Finally, add one or two tsp of lemon juice. Mix it everything. Neer Mor is ready. Serve after 15-30 minutes so that all the flavors will absorbs into the mor. Now it is ready to serve.

NOTES

Adding asafoetida will enhance the flavor of the neer mor.

Strain the mor before serve or serve as it is. It's totally up to you.

Taste the mor, add more or less lemon juice. If your buttermilk is very sour, you don't need to add lemon juice.

Resting the mor for 15-30 min before serving is important. It helps the mor to absorb all the flavors.
