Mini Masala Vadai/Paruppu Vadai Bites - Deep fried balls that is made with main ingredients like ground bengal gram(soaked) together with fennel seeds, garlic and mixed with onion, curry leaves, green chilli and salt. It's a famous south indian snack which we can get probably in every tea shop.

For the people of Tamilnadu(India), I think I don't have to explain a lot about masala vadai. It will be available in every tea shop in the morning and evening though many tea shops sells through out the day. It's a perfect snack to munch at anytime a day like morning with breakfast or afternoon with rice as a side dish or evening as a snack. Back in my hometown, a lady used to sell paruppu vadai, vengaya vadai around 11'o clock in the morning door to door. So I had this a lot at that particular time during my college vacation, This masala vadai brings out a lot of memories :) Now, I am happily sharing this recipe with you all.

Here, I am making mini masala vadais. It is very popular in my hometown(kovilpatti). There is this one shop famous for that. We can finish a vadai in one bite. In that shop, they will make this extra crispy. If you like extra crispy vadais, you can fry it a little longer. If you are bored with classic masala vadai shape(like I did in vazhaipoo vadai), you can try this bite size vadai. Now, let see how to make it..

Prep Time: 3 hours(soaking time) | Cook Time: 15 min

INGREDIENTS
  PRINT RECIPE  
To Grind
Kadalai Paruppu / Bengal Gram - 1/2 cup
Fennel Seeds - 1 tsp
Garlic - 1 clove
Ginger - 1 small piece
To Make
Onion - 1/4 cup (chopped)
Green Chilli - 1 to 2
Asafoetida - 1 pinch
Curry Leaves - Few
Coriander Leaves - 1 tbsp
Salt - to taste
INSTRUCTIONS

1Wash and soak kadalai paruppu for atleast 2-3 hours. Chop onion, coriander leaves, ginger, garlic, green chilli and keep aside. Now drain all the water from paruppu/lentil.

2In a mixer/blender, add drained lentil together with ingredients under to grind(chopped garlic, ginger and fennel seeds). Grind it to a coarse paste without adding any water.

3Transfer the ground mixture to a bowl, add salt, asafoetida, chopped onion, green chilli, coriander leaves and curry leaves. Mix it well with your hands. Then make small balls(gooseberry size) out of the mixture. Heat enough oil in a pan to frying. When it heated, add the balls one by one carefully. Fry it till it becomes nice golden brown. Fry all the balls.

4After frying keep the vadais in a tissue paper to drain any excess oil. Crispy bite size masala vadai is ready to eat.

NOTES

You can add few mint leaves with the ground mixture(as in step3) for an extra flavor.

If you like classic masala vadai shape, feel free to change it. Just flatten the balls with your palms and deep fry it.
