Lemon Mint Cooler is a perfect summer drink. It's very refreshing in hot summer. I have tried few times before to make this perfect lemon mint cooler. I made this drink with granulated sugar, powdered sugar and finally simple syrup but simple syrup works best and taste better. I also added roasted cumin powder that gives a nice flavor and punch.

Lemon Mint Cooler

Cook Time: 5 min (for simple syrup)

INGREDIENTS
  PRINT RECIPE  
Mint Leaves - 1/2 cup
Lemon Juice - 2 tbsp
Cumin Powder - 1/4 tsp
Salt - a generous pinch
Cold Water - 2 cups
Ice Cubes - few
For Simple Syrup
Sugar - 2 1/2 tbsp
Water - 3 tbsp
INSTRUCTIONS

1Take sugar and water (ingredients mentioned under simple syrup) in a pan and heat it. Stir it with a spoon till sugar dissolves. Once sugar dissolves, boil it for around 2 minutes. When it gets a little bit thicker, remove from the stove. Let it cool completely. Squeeze juice out from the lemon. We just need 2 tbsp.

2Now, remove mint leaves from the stalk. Wash the leaves well with water. After that add the leaves to blender or mixer with 1/2 cup cold water and lemon juice. Blend well.

3After that strain this with a strainer. Discard the pulp. Add add the remaining water (1 1/2 cup), cumin powder, salt and simple syrup. Mix everything well with a spoon. Now it's ready to serve. Pour this in a bottle or glass with ice cubes.

NOTES

Blending mint with ice cold water and lemon juice helps to retains its color. Otherwise the color will change it to dark green (like its cooked).

Do not boil simple syrup too much.

Adjust sweetness as per your taste. You can also use honey instead of sugar syrup.

If you want, you can add add an extra tbsp lemon juice. I have added only 2 tbsp of lemon juice to enhance mint flavor.
