I used to sit next to my mom and watch her cleaning vazhaipoo in my childhood. So I knew how to clean that from my school days but I did not help my mom much in cleaning. I started doing this after my marriage. cleaning the vazhaipoo takes time. But it is the time that worth spending because of its health benefits. If you are a beginner or new at cooking vazhaipoo, this post might be very useful for you. Just follow my instructions below..
How To Clean Vazhaipoo
INGREDIENTS

Vazhaipoo/Banana Flower
Buttermilk
Oil
INSTRUCTIONS
  HIDE STEP PICS  

1In a bowl take water(approx 2 to 3 cups) and mix 2 tbsp of yogurt. Keep this aside. Spread a newspaper on the surface that you are going to work with for avoiding stain. Once your are done, you can wrap the waste in the newspaper and trash it. Here, I am not using newspaper because you may not be able to see the step pictures clearly. Next, spread little bit oil on your both hands and take the vazhaipoo.

2Remove the first(top) red petal. We are not going to use this. As you go further the inner petals will be white.

3Now the bunch of flowers will be visible.

4Just pluck those flowers with your hands.

5Take one floret out of the flowers and open it. Remove the small transparent plastic like petal (marked as No.2 in pic). The remaining parts may look like the same. Don't get confused. We are going to remove the one (we call it as narambu) with a ball/bulb shaped tip. Remove this part also (marked as No.1 in pic). Trash these two parts as they are not edible.

6Remaining parts are edible. Below pic clearly shows which parts are edible and which are not.

7Once you clean each floret(edible parts), put it in buttermilk. This way we can avoid the floret becoming brown or black.

8Repeat the same steps (step 2 to 7). When you start, the flowers would be big (like right side in the pic below) which you can clean easily but when you go more than halfway through it will get smaller and smaller (like left side in the pic below). You don't need to clean this smaller and tender flowers, use these flowers as it is.

9Continue doing this till you reach the small bud like the pic shown below. Just trim the top, bottom slightly and eat it right away. It's very good for health.

10Now, cleaned vazhaipoo is ready to use in your cooking. Just chop them up and use it.

NOTES
Keep the flowers immersed in buttermilk till you start cooking. It is very important, otherwise the color will become brown or black.
You can also chop and keep it in buttermilk in the refrigerator overnight for use it on next day.
Spread the newspaper on the working surface. I did not use newspaper here because you may not be see step pic clearly.
