Chickpea Avocado Salad - Cooked chickpea and chopped avocado, cucumber, tomato mixed with olive oil dressing. You can eat this alone as a light meal or have a small portion with your main meal. Either way it will be delicious and it is very healthy too. It is also very fulfilling. I love this salad especially the combination of this salad. Crunchy cucumber, soft and buttery avocado, protein and fiber rich chickpeas, sweet tomato pairs up perfectly together.

I had avocado salad with cucumber and tomato before. I thought why not try to indianize the salad? So I added chickpeas and cumin powder to bring out some indian flavor to it. You can also explore it with more ingredients if you want. Try this salad and you would love to make it more often. Here, I added grape tomatoes which brings little bit of sweetness to the salad. You can also use regular tomatoes but better remove the seeds before using it. Consume immediately after making it to get all the goodness from these fresh ingredients. Chickpea Avocado Salad

INGREDIENTS

Chickpeas - 1/2 cup
Avocado - 1 (med size)
Cucumber - 2 (small)
Grape Tomatoes - 10 to 15
For the dressing
Olive Oil - 2 tsp
Lemon Juice - 1 tbsp
Cumin Powder - 1/4 tsp
Pepper Powder - 1/2 tsp
Salt - to taste
INSTRUCTIONS

1Soak chickpeas in water for minimum 6 hours. Then drain the water and cook it in a pressure cooker with water(approx 1 to 1 1/2 cup) for 3 whistles. After that let all the pressure release by itself. Then open the cooker and drain all the water from the chickpeas and keep it aside to cool down.

2Now, wash the cucumber and peel the skin. Chop it into small pieces and also chop the tomatoes into small pieces. Next, Cut the avocado into half and remove the seed. Scoop out the flesh with a spoon and cut into small pieces.

3In a bowl take everything under for the dressing(oil, lemon juice, cumin powder, pepper powder and salt). Mix it everything with a spoon.

4Add cooked chickpeas, chopped cucumber, tomato, avocado to the bowl. Mix everything well till everything is coated well with the dressing. Now its ready to serve. Serve immediately.

NOTES

You can also add sliced onion to this.

Here I added grape tomatoes but you can also use regular tomatoes. If the tomatoes are sour, add in little quantity.

Drain all the water from chickpeas before adding to salad. Otherwise salad will become runny.
