Carrot Rice/Carrot Sadham - Basmati rice is cooked then mixed with sauteed onion, whole garam masala, grated carrot with many other ingredients.

It is a very simple and easy to make dish and it's a very nice way to add carrot in our menu. You can have this with any gravy of your choice or raita. Today I am having carrot rice with Onion Cucumber Raita and stuffed ladyfinger.

Carrot Rice/Carrot Sadham

Basmati Rice - 1 cup
Water - 1 1/2 cup
Oil - 1 tbsp
Ghee - 1 tbsp
Onion - 1 cup (sliced)
Green Chilli - 1
Ginger Garlic Paste - 2 tsp
Carrot - 2 cups (grated)
Chilli Powder - 2 tsp
Bay Leaf, Clove - 1
Cardamom - 2
Cinnamon - 1/2 inch piece
Lemon Juice - 2 tsp
Coriander Leaves - 1/4 cup (chopped)
Salt - to taste

1Wash basmati rice 2-3 times and soak it in water for at least 30 min. After 30 min, drain the water and cook basamti rice in a pressure cooker with 1 and 1/2 cup of water and required salt for 2 whistles. After that let it cool down completely. Meanwhile chop onion into thin slices and slit the green chilli. Also, grate carrots using grater.

2Heat 2 tablespoon of oil in a pan. Add bay leaf, cinnamon, clove and slitted green chilli, allow it to splutter. Then add curry leaves and sliced onions. Saute it for 2 min. Add ginger garlic paste. Once the raw smell goes off, add chilli powder. Stir it well. Then add grated carrot to it.

3Saute the carrot for 2 min. After that add salt for carrot, little bit water(1/4 cup) and cover it with a lid. Let it cook for 5 min.

4Now open the lid, add half of the cooked rice and mix well. Once it is well combined add the remaining rice and mix well. Finally add coriander leaves and lemon juice. Give it a quick stir and switch off the stove. Colorful carrot rice is now ready!!

You can add roasted peanuts or cashews for a nutty taste.

If you don't want add whole spices like bay leaf, you can replace it with garam masala powder.

You can also prepare carrot rice using any regular cooking rice like sona masoori(raw rice), ponni instead of basmati rice or even with left over rice.
