Vegetable Pulao is a quick lunch menu which can be prepared easily. There's not a lot of work needed here as this is a one pot meal. Yet it's very flavorful and delicious. You can have any kurma, rich gravies (both veg and non-veg) of your choice as a side dish with this rice. It can also be eaten without any gravy. It can be packed for a lunch box, it won't go dry as we are adding milk. I always like to cook any pulav with basmati rice in a pan or flat kadai rather than a pressure cooker. But you can make it in a pressure cooker if you are comfortable with it. Refer the notes in recipe for the pressure cooker method. Do try this simple and flavorful pulao and share your thoughts.

INGREDIENTS

Basmati Rice - 1 cup
Water - 1 1/2 cup
Milk - 1/2 cup
Onion - 1 cup (sliced)
Ginger Garlic Paste - 2 tsp
Green Chilli - 2
Bay leaf - 1
Cardamom - 3
Cloves - 2
Cinnamon - 1/2 inch piece
Salt - to taste
Oil - 1 tbsp
Ghee - 2 tsp

Mixed Vegetables:
(totally 1 and 1/2 cup)
Carrot - 1/4 cup
Beans - 1/4 cup
Cauliflower - 1/4 cup
Potato - 1/4 cup
Peas - 1/2 cup
INSTRUCTIONS

1Wash basmati rice 2-3 times and soak it in water for at least 30 min. Meanwhile chop all the vegetables (carrot, potato, beans) into small pieces and chop the cauliflower into small florets. Slit the green chilli and slice the onion. Keep it ready.

2Heat a pan, add oil and ghee. Then add bayleaf, cinnamon, cloves, cardamom and green chilli. Stir it for a second. Next, add in sliced onion. Saute it. Once onion cooked soft, add in ginger garlic paste. Stir well.

3Once the raw smell of ginger garlic paste goes off, add all the chopped vegetables. Saute it and cook for 2-3 min.

4Drain all the water from the soaked rice and add it to the pan. Mix and stir well. Now add milk, water and required salt and let it boil.

5After it starts boiling, reduce the flame to medium low. Cover the pan with lid and cook it for 10 to 15 min. Keep an eye in between. Once the rice gets cooked and absorbed all the water, switch off the stove. If you are cooking in a pressure cooker, cook it for 2 whistles.

NOTES

If you want veg pulao more rich, feel free to add coconut milk instead of milk.

Pressure Cooker Method: Follow step #2 and #3 in pressure cooker. After that add rice, water, milk and required salt. Then close the pressure cooker lid and cook it for 2 whistles.
