Vazhakkai/Plantain chips is a simple home made chips recipe. It can be made very quick. All you got to do is slice the plantain, fry it, season it. Ta-da.. It can be a vey good appetizer, side dish or a perfect snack.

My Mother-in-law makes this recipe very often because it's my hubby's favorite. I also tried and it came out very well. So why not sharing the recipe with you guys? Do try this recipe.

INGREDIENTS

Vazhakkai/Raw banana - 2
Oil - enough to deep fry
Chilli powder - 3/4 tsp(approx)
Salt - to taste

1Cut the edges and peel the skin of vazhakkai.

2Cut into two parts and keep them in a bowl of water so that it doesn't change colour.

3Meanwhile heat enough oil to fry chips in a pan. After it is getting hot take one piece of plantain and make thin slices using a slicer.

4Drop the sliced pieces immediately into the hot oil. Fry until it gets golden brown color. Drain excess oil by putting the chips on tissue paper. For the next batch slice the next plantain piece and fry it. Slice it batch by batch and fry it or you can slice directly into hot oil.

5After its done, season the chips with salt and chilli powder immediately. When you season the chips while it is hot it will bw well absorbed by the chips.

NOTES

Keeping peeled plantain in water is very important otherwise it will become black.

Instead of making slices in several batches, you can slice them all and keep it in a bowl of water. But you have to be very careful when you drop it into hot oil as it was in water.

Adjust chilli powder according to your taste. You can also add little bit of asafoetida.

Crispy and golden chips are ready to enjoy!
