Ulundhu Soru/Ulundhu Sadham - It's a very healthy lunch menu. Roasted black gram cooked with rice, water, salt, garlic cloves and cumin.

As I mentioned in my earlier Ulundhu Kanchi post, Ulundhu is very healthy. It gives greater benefits especially for women. It helps to improve bone strength. You can make ulunthu kanchi, ulunthu soru, ulunthu kazhi etc out of ulunthu.

Now talking about side dish, ulundhu soru pairs well with chicken and mutton kuzhambu(gravy). It also goes well with any puli kuzhambu. It is very popular in south tamilnadu. My mom used to make this very often. Now I am sharing the recipe with you all.

When you start to make this dish, take black gram/ulundhu in a plate and check for any stones and impurities. Sometimes it may have some stones. So to avoid that, check well before you start. Okay, let's prepare Ulundhu Soru..

Ulundhu Soru / Black Gram Rice

INGREDIENTS

Raw Rice - 3/4 cup
Splitted Black Gram/Splitted Karuppu Ulundhu - 1/4 cup
Garlic Cloves - 3 to 5
Cumin Seeds - 1 tsp
Salt - to taste
water - 2 1/4 cup
INSTRUCTIONS

1Add the ulundhu in a heated pan and dry roast it for 4-5 minutes. Once it becomes slightly golden brown, remove it from the stove. Transfer it to a bowl and let it cool down completely.

2Take rice and roasted ulundhu together in a bowl. Wash well for 3-4 times. Then soak it in water for half an hour.

3After 30 minutes, drain the water. Then add both rice and ulunthu, garlic cloves and cumin seeds to a pressure cooker. In addition to that add required salt, 2 and 1/4 cup of water. Now Close the lid, pressure cook this for 1 whistle in high flame and another 2-3 whistles in medium flame. Then switch off the stove. Ulunthu soru is now ready.

NOTES

Dry roasting the ulundhu is very important. It prevents ulundhu becomes mushy and gives a good texture.

Rice may look mushy when you open the pressure cooker right after all the pressure is released. But as it cools down, it will be fluffy and each grain will be separate.

If you don't like ulundhu/black gram with skin, use skinned black gram/ulundhu. But black ulundhu is more nutritious than the skinned white ulundhu.
