I am going to share another quick upma recipe as I shared in my previous post. It is nothing but Semiya/Vermicelli Upma with vegetables. It can be done within 30 minutes. When you are in a hurry but still you want to have a good breakfast, you could try this. This dish is loaded with vegetables which makes it healthy as well.

In this version, I am adding carrot, beans and green peas. If you like, add potato too. Another delicious dish, biriyani also can be made out of semiya. But this one is quite simple. People who don't want to have lot of masalas and spices (like biriyani) in their breakfast could prefer this. Do try this at home, let's get into the recipe..

Semiya/Vermicelli Upma

INGREDIENTS

Semiya - 1 cup
Water - 1 1/2 cup
Onion - 1 (small size)
Ginger Garlic Paste - 1 tsp
Green Chilli - 2
Carrot - 1
Beans - 6 to 7
Green Peas - 1/4 cup
Turmeric Powder - 1/2 tsp
Oil - 1 tbsp
Ghee - 1 tsp
Mustard Seeds - 1/2 tsp
Curry Leaves - 1 sprig
Coriander Leaves - 2 tbsp(chopped)
Salt - to taste

1First, boil some water and add peas to it. Let it cook. This will take around 5-10 min. After peas are cooked, drain the water and keep aside. Meanwhile chop the vegetables, slice the onion, slit the green chilli.

2Heat a pan, add oil and ghee. Add mustard seeds, allow it to splutter. Then add slitted green chillies and curry leaves. Next add in onions and saute till it becomes soft. Then add ginger garlic paste. Saute it till its raw smell goes off.

3After that add the chopped vegetables, turmeric powder and saute it. At this time add very little salt for the vegetables. Add a splash of water, reduce the flame and cover the pan to cook the vegetables. After 5 min, add in the cooked peas. Turn the flame back into high.

4Pour water, add required salt. Let it come to a rolling boil. Taste the water to check the saltiness. Water has to be little bit extra salty. Add semiya to the boiling water. Cover the pan and cook it on low heat.

5Wait till all the water gets absorbed. By the time semiya would have been cooked well. Finally add the coriander leaves and mix it. Turn off the stove.

NOTES

Here I used thick semiya. If you are using thin semiya, add less water.

The semiya used here is already roasted. If yours is not roasted, just add a tsp of ghee in a pan. Add the unroasted semiya, roast well till it becomes golden brown.

Quick breakfast, vegetable semiya upma is ready to serve. Enjoy !!!
