Idli Podi - Pretty much every house in Tamilnadu will always have this podi including mine. It's one of a side dish for Idli and Dosai. You just have to mix this podi with sesame oil or coconut oil and eat it with idli and dosai. On a lazy morning, I will just eat Idli or Dosai with this podi or sometime I will make awesome podi idli which I will share soon.

If you are a beginner at cooking, follow the recipe exactly as it says. Once you get a hang of it, you can adjust the ingredients as per your wish. Grind and store it in an airtight container and have whenever you want. Let's move on to the recipe.

Idli Podi

INGREDIENTS

Whole Ulunthu(White)/ Skinned Black Gram - 1/2 cup
Kadalai Paruppu / Bengal Gram - 1/4 cup
Dried Red Chilli - 20 to 25
Sesame Seeds - 1 tbsp
Curry Leaves - 1/4 cup
Garlic Cloves - 4
Hing - 1/4 tsp
Oil - 1 tsp
Salt - As Required
INSTRUCTIONS

1Heat a pan over medium flame. Add both lentils (Ulunthu, Kadalai Paruppu) to the pan. Dry roast for 2-3 min. Then add red chillies. Roast all together till lentil becomes golden brown and red chilli becomes crisp. After that transfer all to a plate.

2In the same pan, add sesame seeds. Roast well till it crackles. Transfer it to the same plate. Then add curry leaves to the pan and roast it in a low flame till it becomes crisp. At this stage, add hing to the pan and transfer to the plate immediately. Because we are adding powdered hing, it will burn within seconds. So to avoid that, we just roast it barely for a second and immediately removing it from the stove.

3Add in a tsp of oil to the pan, add the peeled and slightly crushed garlic cloves. Roast it till garlic becomes nice golden brown. After that, transfer garlic to the plate. Switch off the stove. Let all the ingredients that we roasted to cool down completely.

4Then transfer all to a mixer and grind it with required salt. Grind it like slightly coarse powder. Transfer the powder to a plate. After it is completely cool down, transfer to a glass jar. Idli podi is now ready to have with idli or dosai.

NOTES

Consistency of Idli podi is depends upon individual's taste. You can grind it as a coarse powder or smooth powder.

Adjust the red chillies depending on your spicy level.
