Egg Fried Rice - Cooked basmati rice tossed together with scrambled eggs, mixed vegetables, garlic and soy sauce in a wok/fry pan over high flame.

Fried rice is a very popular Indo-Chinese item in India. Though its not a very fancy dish, most of the people love this. You can see lot of street food shops and restaurants have this item in their menu. There are few variations on this recipe like schezwan fried rice, vegetable fried rice, egg fried rice and chicken fried rice. These are all very easy to make at home. You don't need to go to a restaurant to have this. I will try to post other variations as well in future.

Today, I am going to share the egg fried rice recipe. If you want vegetable fried rice, simply skip adding the eggs and follow the remaining steps. We are going to make fried rice in a high flame. So please try to use an iron pan, aluminum pan or stainless steel pan instead of a non-stick pan. Now, let's heat the pan. I mean, let's start cooking :)...

INGREDIENTS

Basmati Rice - 1 cup
Water - 1 1/2 cup
Gingelly Oil/Sesame Oil - 3 tbsp
Egg - 3 or 4
Garlic - 3 cloves
Onion - 1/4 cup (sliced)
Carrot - 1 (medium size)
Beans - 10 to 15
Capsicum - 1/2 cup (chopped)
Spring Onion - 1/4 cup (chopped)
Soya Sauce - 3 tsp
Tomato and Chilli Sauce - 1 tsp (optional)
Pepper Powder - 1 tsp
Salt - to taste
INSTRUCTIONS

1Wash basmati rice 2-3 times and soak it in water for at least 30 min. Meanwhile finely chop the garlic cloves and chop onion into thin slices. Also, chop the vegetables(carrot, beans, capsicum and spring onion) into small pieces. After 30 min drain all water from rice and keep it aside.

2In a pan, pour 1 1/2 cup of water and bring it to boil. Once water starts boiling, add soaked rice, required salt and a tsp of oil. Simmer the stove. Cover the pan and let it cook. Rice will be ready in 10-15 min. Keep an eye in between.

3After the rice is cooked, fluff it with a fork. Each grain has to be separate. Spread cooked rice in a plate and let it cool completely.

4Meanwhile heat a pan with a tbsp of oil, add eggs. Mix it with a spoon and cook it. Add required salt and a little bit pepper powder just for the eggs and mix it till eggs are cooked. Transfer it to a plate and keep aside.

5In the same pan, add a tbsp of oil, chopped garlic. Saute it little bit, then goes in sliced onion. After onions are cooked soft, add chopped carrot and beans with required salt just for the vegetables(remember we already added salt for rice and eggs). Stir it and let it cook it in a low flame. After 5 min add copped capsicum and saute it.

6Turn the flame to high. Add soya sauce, tomato and chilli sauce. Mix it well.

7Now add the scrambled eggs, mix it. Then add cooked rice and toss it gently.

8Finally add required pepper powder and chopped spring onions, toss it a bit. Turn off the stove. Yummy and colorful Egg Fried Rice is ready!!

NOTES

I added only a tsp of pepper powder as I added chilli sauce in this recipe. If you are not adding chilli sauce, add more pepper powder.
