Carrot Kheer/Carrot Payasam- It is a sweet delicacy. Boiled carrots are pureed and added to the simmered milk along with sugar and few other ingredients.

If you want to make kheer but with simple ingredients then this is the perfect recipe for you. You can serve this as a welcome drink in the party or serve as a dessert. When large number of people coming over to your house, you can prepare this ahead, refrigerate and serve it chill otherwise make and serve at room temperature. This has a nice color coming from the carrots which makes the dish look attractive.

I am adding raw almonds at the end to give kheer a little bit of crunchy texture. On the other hand, you can add ghee roasted cashews and almonds to the kheer instead of raw almonds. Now, let's get into the recipe..

Carrot Kheer/Carrot Payasam

INGREDIENTS

Carrot - 1 large size or 1 cup chopped
Milk - 2 cups
Cashews - 6 nos
Cardamom - 2 nos
Sugar - 4 tbsp
Saffron - few strands(optional)
Almonds - 5 nis

1First boil 1/4 cup water, transfer it to a bowl and soak cashews in it. Next, roughly chop the carrots. Then finely chop the almonds, crush the cardamom well into powder and keep it aside.

2In a pressure cooker, add chopped carrots and water just enough to cover the carrots(approx 3/4 cup). Pressure cook it for 3 whistles. After that let it cool down completely.

3Meanwhile, add milk to a pan. Heat it till it comes to a boil and let it simmer for 5 minutes. Now, take 1 tablespoon of milk from the pan and pour it to another bowl with saffron and keep it aside.

4Stir the milk (which is simmering in the pan) often to avoid burning. Grind the cooled carrots and soaked cashews together with very little water. You can use the water that we used for cooking carrots. Add the puree to the simmering milk. At this stage, add sugar and cardamom powder. Mix well. Simmer it for another 5 minutes.

5You can see now the kheer is thickening. Add the saffron milk to the kheer. Mix well. Once it gets your desired consistency, switch off the stove and add chopped almonds. Enjoy!!

NOTES

You can adjust the consistency of the kheer as per your choice. If you want to make it runny, don't boil the kheer for too long.

Have this chilled or hot. Either way it will be delicious.
